The foundation for this beer has always been un-fruited, blond Saisons and Wild Ales that focus on vinous characters that exemplify not only our love of wine, but that of the crew of The Wine & Cheese Place as well. The focus is simplistic blends that provide incredible depth and a fun, unique palate experience that showcases Side Project characteristics.
- 43.6% of our Foedre Blond - 5 years of solera method in a french oak foedre
- 39.8% of #40 - 12 months in french oak puncheons (Blended 2017 recipe and processes)
- 8.7% of Foedre Terry - 8 months in french oak foedre (collaboration recipe with de Garde)
- 7.9% of Oude Fermier - barrel fermented and aged 18 months

750mL bottle drunk 10/23/25.
Deep brass, good clarity. Small, creamy, beige head.
Big oak and lacto, not too acidic, it seems, though somewhat hard to tell from the nose. No acetic, so that's always a plus. Still has some good tannin structure and apparent malt, though no real sweetness/richness at this point. Very rustic with a pretty delicate (at least by SP sour standards) fruitiness lingering. Nothing off or problematic here nor can you tell its going on 8 years old.
Decidedly richly-malted with good oakiness and a good deal of acidity remaining. Lots of lacto, little Brett, little acetic. Impressive that this much texture remains. And there's a good funk and big minerality to it redolent of a lambic, which is lovely. It's still quite sour, true to Side Project, but not punishingly so, at least not at this point in its life.

Pours Clear, darker blonde. Small white head. Scent is bit petrol - like riesling grapes - due to the funk. Oak, citrus, american funk in a very good way. Taste is smooth, pertrol, citrus, grapes almost in it's fruityness as well. Lactic acid (very balanced) . Oak. Medium body under a medium high carbo. Lovely.

Bottle @ Cafe Albert. Pours hazy yellow with a white head. Aroma of malt, light sourness, yeast, funk, some cheese, oak, tart fruit, grapes. Flavor is light sour, malt, yeast, funky, wood, oak, tart fruit, grapes. Medium body, average carbonation, dry and acidic finish. 271121

Bottle, 750 ml at Miro B's Grande tasting. Shared with him, Max and JFK10000. Hazy orange, small white head. Funk, barnyard, citrus, juicy, lemon. Medium+ sourness. Soft texture. Nice one.
Fuzzy base goes far, bready and tart, great nose.

Dosc mocno kwasny, octu kapinka chyba tez w tle jest, ale tez fajnie przyprawowoowocowe, tak mirabelkowo. Moze lambik to nienjest, ale i tak pyszka piwerko byloby gdyby nie faktycznie troche kiszonki

750ml bottle. Mineraly, sour and funky with some farmyard, citrus, tart fruits and lemony notes. Pretty good and balanced.

Bottle at Tilt Side Project Tasting; hazy golden yellow pour with zero head, aroma has lemon and some apple, taste has lemon, grape, some apples.
