In 2017 De Katsbier and Sikaru beers join forces to create Brasserie De Katsbier.
The Brasserie De Katsbier is located in the heart of the Monts de Flandre, in the town of Méteren. It takes its name from the contraction of “Katsberg” and “Bier”, meaning Mont des Cats and Bière respectively in Dutch. Why this name? Simply because the brewery is located at the foot of Mont des Cats, in the Houblonnière business area, located between the Méteren hops farm and Mont des Cats.
The brewery consists of a brewing tank with a capacity of 20 hectoliters and 4 fermenters of the same capacity. This material of Canadian origin was purchased second-hand and allows an annual production of up to 1000 hectoliters per year. After brewing, the must undergoes fermentation for about a week, then refrigerated (cellaring) for 15 days. After this maturation period, the beer is bottled and then completes its refermentation in a hot chamber over a period of 15 days to reach sufficient CO2 saturation to cause a nice sparkle and a nice creamy foam.
