A hazy light yellow beer with a nice white head. Both the aroma and flavor are very wheaty with a strong presence of lemon.

A pitch black beer wtih a lasting brown head. The aroma is sweet roasted with light notes of coffee - and in general the aroma is a bit light, but that was just coming off Peche Mortel. The flavor is sweet with coffee dominating, but also with lots of roasted malt. Another nice brew from Dieu du Ciel.

[Tap at the brewpub] A pitch black beer with a small brown head. The aroma contains strong notes of primarily coffee and vanilla - reminds me of a good ice coffee. The flavor has strong notes of roasted malt, coffee, and again vanilla. Wow.

A deep red beer with a small orange head. The aroma is sweet and dominated by berries - of which cowberries stand out. The flavor is also sweet with notes of wood, cowberries, and cranberries.

[Brewed February 2005, sampled July 2005] An unclear amber beer with a small orange head. The aroma is very hoppy and grassy combined with notes of lemon. The flavor is sweet with lots of hops and alfa acids, but also some notes of wood. Nice for a five months old IIPA - I’d love to taste this fresh.

[January 2005 version - sampled July 2005] A hazy deep red beer with a small orange head. The aroma is sweet with lots of wood, but also some maple sirup. The flavor has the maple syrup running in the cheeks, while the wood dries out the tongue - add to this notes of cherries, and You have a wonderful beer.

[2 year old bottle at RBSG 2005] An unclear dark amber beer with a disappearing beige head. The aroma is sweet with strong notes of wood, alcohol, and berries - a really powerful aroma. The flavor is very powerful with notes of alcohol, wood, and berries, leading to a dry alcoholic finish. The alcohol is so strong, that it burns my stomach. The body is very powerful and it is very well aged.

Tap and Spuyten Duyvil - as one that loves his coffee as much as his beer, and one that has tried quite a few coffee stouts, I must say that I really haven’t seen any beer that has "married coffee and beer so naturally and seamlessly" - the mouthfeel is oil and rich, but not overly thick and heavy - jet black with minimal head - aroma of, yup, coffee, with hints of sweet cream and roasted malt - soft carbonation accentuates the creaminess of the flavor - coffee, cream and a hint of chocolate - I’ve never tasted such common flavors put to such good use, or taste quite so complex - a great beer all around.

Bottle graciously shared by Buch Dich athe the Boise RB poker night. Very dark and viscous with small tan head and persistant though sparce lacing. Very strong coffee aroma. DUH ! Very thick and slick. Deep smokey flavors but just over the top coffee just kicking it. Very interesting and delicious. Ive had a few other highly reated coffeee imperial stouts and liked them as well. Sweet, coffee, molassas and smokey goodness. Lovely Thanks Jordan for sharing

On draught at the brewpub, 7/9/05, RBSG. Lovely red-amber to light-auburn-orange colored beer, glassy looking, perhaps a chill haze, with a smattering of off-white to cream colored head, well-retained (as are all of the beerheads on DdC’s beers). Aroma (and to some extent, the flavor)of Newman’s Own Hot Black Pepper Pretzels. Light and a bit nutty, with a slight hint of floral notes and then a bit of grainy malts, very low sweetness. The flavor begins with a hint of toasted grains, bits of sugar here and there, but stays mostly dry throughout with a slight pepper sensation picking up on the palate, climaxing in a lovely, burning ending of black pepper deliciousness! Wow, never have had a beer with black pepper as the theme before, but it functions much as a chili beer, really coming out as and after you swallow. Slow burn, quite interesting and novel. I don’t see any of the ginger qualities, this tastes like raw black pepper to me. And I eat pepper on EVERYTHING (almost). Body is medium, with a light amount of house yeast character, fairly dry, touches of fruit and a bit of breadiness/paperiness. Lightly watery texture, moderate carbonation. Though the pepper plays center stage, the usual supsects are not lost here. Yeast, hops and malt are all to be found. Really interesting stuff, I’d love to marinate a steak in this.
