Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.

"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.

Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.

Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

Bottled 0,375 ltr Cherry red, decent creamy mostly vanishing reddish head. Earthy farmhouse aroma with some strawberries, grape there too. Sour (of course), quite red wine -like grape flavors burst from the background. Not really so much different than their Kriek, but this one lends towards more winous flavor palette.

Tap at Spuyten Duyvil’s yeast feast - probably one of the least sour of Cantillon’s lambics, but, as anyone experienced with them knows, that doesn’t mean it isn’t still mouth-puckering - cloudy burnt gold/orange - lovely wild yeast and white wine aroma, with just a small undercurrent of tart apricot - the sourness seems less like a wild yeast sourness, and more like they used under-ripe fruit to lend a different kind of tartness to this particular beer - woody, barnyard, characteristically Cantillon flavor abounds underneath - and under THAT, an almost alcoholic, tannic, wine-like flavor - very complex stuff, but even with the lower sourness, it’s still hard to drink more than a few ounces in a sitting.

Clear cherry color with a thin frothy off-white head. Sour and musty aroma. Very sour flavor, light cherry hints, some musty notes, light yeastiness.

Bottle. Still golden beer with little head. The aroma is slightly fruity and lightly sour and the flavour is largely sour and nothing else. Overall a disappointing beer.

(Draught at Akkurat, Stockholm) Colour is red, raspberry red to be specific, small pink head. Nose is acidic and harsh with raspberry and some vanilla notes. Taste is acidic and harsh, almost like unripe rhubarb, with fresh raspberry notes. The acidity tends to overshadow the berries, however. Very dry and very refreshing.

750cl. Hazy orange with little white head. Smells, looks and feels like a cantillon product. Very sour, but this has a little bit of sweet in the end from the abracot feel! Great! Bottle @ Too many geuze’s only one toilet, Ulfborg 2012. Wauw. Tasted 2005 and 2011. 2001: Fresh fruit - really fresh apricot. Young vaguely tart 4.. 2005: Horse manuer, barnyard, light fruit and pungeantly tart! 4,3. Re-rate 2016. Fresh.. Apricot, funk and barn. Complexity! Top 10 sipper for me.

Red with white head. Very sour because of the fruit I guess, but again sour like cantillon’s other products. Lively carbonation. good lasting finish! 2006. Wauw if there were a beer that needed a rerate :-) Intense jammy cherries. Tart, dry and funky with the cherries lingering. I love this classic and prefer it over most from the brewery. 3,8-4,3

Bottled. Hazy golden. Concentrated oaky muscat grape aroma. The acidity is less hardcore than in the Reed Pinot Noire. Still the trademark Cantillon style citric acidity is definitely there. Upon it lies the concentrated oaky, vinous muscat character and some cobwebs and barnyard. It’s way more directly appealing and aromatic than the Reed Pinot Noire. Perhaps the big flavours makes it slightly less complex, but it’s still absolutely fantastic. I’d give it 11/10 for aroma if I could....

(Vintage 2003. Draught at Akkurat, Stockholm 30 Apr) Colour is clear red, with little head. Nose is acidic, harsh with some raspberry character. Taste is acidic and harsh with some raspberry character evident. Very dry and acidic finish. A very nice beer, but the acidity overshadows the berry character a bit too much. Ɩ/4/6/4/15=3.5) Rerate: draught at Akkurat, Stockholm, 22 Sep 2009. Dark red colour with frothy, pink head. Tart, acidic nose with red berries, raspberries, stable, barnyard and a touch of wood. Tart taste with notes of red berries, raspberries, wood and a dry, tart, harsh finish. The same taste elements as in the first rating, but a lot more fresh and tasty. Lovely beer.

Bottled. Cloudy reddish purple, brief head. Underneath the trademark acidic Cantillon aroma there is a mere hint of blueberries and red wine. Heavily acidic witj plenty of citric acid. Very dry. The Pinot Noirs are evident, but in comparison with most fruit lambics they are more subdued. Concentrated citiricity - it feels like one of the most hardcore acidic Cantillons. Some light grape stone bitterness finishes it off. Good and elegant, but perhaps not as extravagant as you might have thought.
