Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.
"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.
Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.
Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

Bottled at Horsens Beerfestival. Unclear, yellow-orange with a small, white head. Barnyard, yeast and citrus, mostly lime, in the aroma. The flavor is lemony and sour with yeast. Thin, very astringent beer with a dry, dusty feeling. It’s nice, but maybe too thin and sour. Rating: 8-4-8-4-16-4. 061028
Bottle, 75cl, at Esbjerg Beerfestival. It’s a hazy, orange beer with a minimal off-white head. Barnyard, lemon and other funky niceness in the aroma. Slighlty rubbery flavor, with barnyard, horseblanket and lots of lemon. Bonedry, astringent and sour mouthfeel. Lemony finish. Almost lip-burning dry, maybe a bit one-dimensional lemony, but sure lovely. 091023

Bottled at Horsens Beerfestival. Clear, red beer with a pink head. Yeast, mould, sourness and berries in the aroma. Yeasty flavor with barnyard-notes. Astringent, thin body and a stinging finish. A nice, teeth-cleansing beer, but as usual with lambics I have troubles describing it, but really love it. Rating: 8-4-7-4-15-3.8. 061028
Bottle, 375ml. A slightly hazy reddish beer with a creamy off-white head of moderate size. The aroma is unmistakable lambic but with a vinous touch without the alcohol. Lemon, funk and fruits in a lovely blend. Medium body, dry and puckering and lovely carbonated. Flavorwise it’s wonderful, sour and lemony, with unripe grapes, funky notes and cellary, barnyardish touch. More straightforward fruity than a pure lambic, yet not as fruity as a kriek or frambozen, still it’s lovely balanced. Damn, this is good, maybe it deserves a higher rating as well, but that would be unfair to some other lambics. Gimme more. 110122

Bottle. Cloudy yellow brown color with a large head that quickly disappears. Tart, grape (vindruer), yeasty aroma. Extremely sour. Grape was detectable only as a sour, underripe grape juice aftertaste.

Bottle 750ml.Clear dark golden / yellow with a white head. Aroma is sour, fruity, somewhat funky. Taste is apricot, tart sourness, and some brett. 8-3-7-3-16 Bottle 750ml. [ Vintage 2011 ]. Clear medium orange colour with a small, fizzy, fair lacing, fully diminishing, white head. Aroma is moderate to light heavy, apricot, light barnyard. Flavour is moderate to heavy sweet and light acidic with a average to long duration, fruity - apricot fresh. Body is medium, texture is oily, carbonation is flat. [20120127] 8-2-8-4-16 Bottle 750ml. [ Vintage 2005 ]. Clear medium orange colour with a small, fizzy, fair lacing, fully diminishing, white head. Aroma is moderate leather, barnyard notes, light apricot, fruit. Flavour is moderate sweet and moderate to heavy acidic with a long duration, dry, barnyard, apricot, tart. Body is medium, texture is oily, carbonation is flat [20120127] 8-2-9-4-18

Bottle. Small head with short duration. Color is red. Aroma and taste are rich raspberries, fruits, lactose acid, brett, vinegar and malt. Nice and sour. Great beer. Original rating 10/28/2006 5/3/6/3/11 Bottle. Virtually no head. Color is red. Aroma is fresh and citric. Taste is rasperry with lots of lactose acid. Bitter finish.
