Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.

"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.

Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.

Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

an unclear orange beer with a small head. The aroma is of sour milk. And so is the flavor, though combined with notes of peach. It has a very dry end. This is not my favorite fruit-lambic.

Dark red color, hazy, with large bubbles and frothy pink head. The aroma is very nice, mild barnyard notes and sour berries, touch of jam. Dry but not weak, aggressively sour, with mild acetic notes, light Lambic character, strong sour berry notes, and some astringency in the final, a bit of vegetable bitterness.
Aggressive, good, but not very elegant.

Cloudy light amber color with orange shades. Pungent aroma, cellar mold and raspberries, very strong. Aggressive mouthfeel, dry, astringent, citrusy, with the raspberries first, and the cellar character then.

Beautiful red color, pink head. Strong cellar aroma, magnesia, maybe some fruits. Sour flavor, wood cask touch, very sour, with some notes of grapefruit as well. Tannins and some astringency in the end.

Beautiful light amber color. The aroma is really sour, not enough fruity; it shows mostly the wood cask, and later some magnesia. Absolutely sour (almost like lemon squash), some tannins. A true one; quite good, very aggressive, not really fruity.

Dark blond colour, clean. The aroma is more poopy than all other times I had this beer. Dry mouthfeel with mild acidity, the flavour too is lightly cheesy; there is some of the funky character expected in a Lambic, but also a bit more wood and astringency in the finish. This was mostly stored cold all this time, yet I'd say it seems a bit old.

Hazy to cloudy blond colour with medium head. It's farty, sulfur, lemon, possibly some cork. Gentle carbonation, mild acidity, if possible there is some slight oxidization, the mouthfeel is soft.
Good, but past its peak, it's becoming a different beer.

2020-07-05, corked and capped bottle, vintage 2016/2017, bottled 19 sept 2016, 5.5% ABV, 8-5-8-4-16=41
Cloudy deep blond colour. The aroma is mildly funky, poopy and yeasty notes are more prominent. The mouthfeel is soft and the acidity is mild; moderate complexity, orange peel, some moldy cellar, touch of lemon. It tastes great and it's very approachable.

Hazy golden colour with generous head. Light Brett and cork aroma, wood, the Lambic character is mild. Smooth mouthfeel, dry and with strong astringency; it's very Bretty, and more sulfuric than other bottles and vintages, the acidity is very mild, light foot.
Interesting experience.

Blond-golden colour, clean, with generous frothy head. Intense aroma, funky and poopy. Low level of acidity, it's dominated by the funk, by some astringency, and by citrus peel (lime and pink grapefruit). It's very clean and complex, a beauty.

Bright copper colour, hazy to cloudy; a thin peristent layer of foam. Initially there is some cork smell; the mild Lambic aroma is almost cheesy. The mouthfeel is soft and smooth, the acidity is moderate, it has a good, rustic Lambic character and a note of acetic acid. Not overly complex, but elegant, definitively I like aged Lambic.

Medium Lambic aroma, some eggs (may be the glass), light fart, light bread, very light puke. The carbonation is soft, the mouthfeel is soft too, the acidity is moderate, with moderate flavor of aged Lambic, very light grapefruit peel, and mild astringency in the final.
I said "mild" too many times.

The aroma is cork ridden, not enthusiastic about that. The mouthfeel is very lively, the acidity is moderate, but it has a lemon character that seems stronger than usual, very drinkable, with some funkiness and astringency in the final, but no cork. The cork will likely mellow out and this will grow to be an excellent beer.

Cloudy golden color with generous head; it's highly carbonated. At first, it just smells like an old wet cellar, then there is a more animal presence, horseblanket; some citrus fruits (tangerine and oranges, light cedar); pungent but with grace. The mouthfeel is quite smooth, and as round as a gueuze can be; good malt flavor, definitively not too dry, with sharp but pleasant sourness, and plenty of bitter orange peel; the final is instead more lemony, and lightly astringent.
Excellent.

2004-02-25, bottled 1997, 8 years old, 8-3-7-4-13=35
Golden color; the head quickly fades. As usual, a wonderful sour and citrusy aroma. Taste without compromises: sour, tart, astringent, with clear lemon juice notes; maybe a bit thinner than usual (probably due to the age). Not very bitter, the final (sourness) is quite long.

Cloudy orange color, short head. Quite normal gueuze aroma, the usual stuff i would say, nicely balanced. For a cantillon it has a quite soft tartness in the taste, but the palate is very extraordinary: very hoppy and bitter and not the lingering tartness. I like the lingering tartness more...

At Allouette Campground

Almost no carbonation, with quite sharp acetic acid character; moderate funky aroma; nice Brett character; poured cold, after setting up the camp, this goes down too well.

It has enough horseblanket character, moderate acidity, no off flavours, but the low carbonation is a bit off putting.

Clean golden colour with slight chill haze, no carbonation. The aroma of Lambic is strong, a bit poopy. The mouthfeel is a bit oily, astringent, moderate acidity, but falling short in the finish.

2016-04-27, Cuvée 2012, Bottled 2015, 3 years old, 7-3-8-4-16=39
Cloudy orange-golden color, no head, no carbonation. It's a very cheesy example, some orange peel, a bit of horseblanket.

2004-02-19, Cuvée 1996, Bottled 1998, 8 years old, 9-4-8-4-15=40
As promised, it's almost flat, looks like wort in the beginning, but gently forms a thin white cap; golden color. The usual wonderful aroma; sour and sweet, light fruitiness and flowers; very light nitrates. Very nice the mouthfeel, lacking almost completely of carbonation; the resulting smoothness helps to more easily stand the sourness; strong grapefruit and pink grapefruit, young woods as well. Quite bitter. You should not miss this one!

Pinkish fizzy head, very fastly disappearing. Cloudy, red body. Grapes-Citrus and red wine in the aroma. Lightly sweet, lightly acidic, moderately bitter initial flavour. Lightly sweet, lightly sweet finish, which is averagely long. Watery texture. Soft mouthfeel. Very good combination of grapes and Lambic (where the Vigneronne is not as splendid as this one).

Nice Lambic aroma, there's the funk, the cobwebs. Well carbonated, soft, almost mellow; moderate acidity, followed by excellent Lambic character, and finishing with some astringency. Very good.

2012-10-02, draught at La Fine Mousse, Paris, 9-5-9-5-18=46
Cloudy light amber color with copper shades, and a generous compact head. The aroma is fantastic, with cellar smell, lemony acidity, and most of all a cheesy character that binds all together and adds complexity. The mouthfeel is very smooth; it has a nice delicate malt flavor, but most of all an evident citrusy character, mostly grapefruit and pink grapefruit; the acidity is very moderate compared to other Cantillon lambics; the final has a correct bitterness level and mild astringency.
Some Drie Fontainen was more complex, this is more straight forward.

Beautiful gold to orange color, persistent perlage, generous thick head. Wonderful aroma, biting: magnesia, wood, malt, dry flowers, hay, fruits. Difficult, astringent, pungent; sour, but with the necessary malt body. Strong sour and bitter end, fruity, like bitter oranges.

I have only managed to try a few lambics, but they do have an addicting quality to them. This one poured a cloudy yellow-orange with just a tiny off-white ring of carbonation. The sour musty aroma was immediately noticeable from several feet away. Had the classic sour/musty lambic flavor that always reminds me of the rind on brie cheese. This was enjoyable to sip, although I do agree with the reviewers who mention this would be better if it had stronger carbonation. Regardless, one sip begged another.

Virtually no head. Hazy orange-blond body. Grape(juice) aroma, also white-wine-like. Lightly sweet - moderately sour initial flavour. Light sourish - moderate sweety finish, which is quite short. Soft mouthfeel. One of the least good Cantillon-beers. The sour flavour of the lambic is still present, but it is softenned by the grapes, a little bit like the Rose de Gambrinus.
