"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.
Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.
Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

Bottle at the Laid Back Brussels Tasting (Feb 9, 2008)
Muddy, red-pink body with a pink fizzy head. Fair lace. Aroma is full of fruit (blueberry) but still sour with a winey woody accent. The aroma is not so complex, nor extremely well balanced (but still great). Heavily sour flavour (red fruit and citrus combined). The fruit, nor the typical Cantillon vinegary acidity isn’t very intense in this beer. Different from the other Cantillons.

Bottle direct from brewery - vintage 2005/bottled in 2007. Sweet-sour raspberry aroma - light mustiness. Beautiful ruby red color - slightly hazy with slight head. Musty, sour raspberry malt flavor - drier than the aroma would lead you to think but raspberry flavor nice and full - excellent vinous features. Another Cantillon work of art. Something special for #2000. /2011 - Fresh raspberry, malt, and musty hay aroma. Hazy ruby red with small head. Sweet tart raspberry, malt, musty yeast, and dry hay flavor. Spectacular balance.

Rerate: Bottled @ RBESG 2013 Grand Tasting. Got some boozy cognac extra to the regular geuze aroma’s. Quite funky, quite some leather. Love it. Original rate: Bottled. Cloudy orange, flat. Nose of barnyard, tart, soft though, bit dusyt. Soft sour taste, slight fruity, some tartness. Nice soft gueuze. 3.8

Straight from the barrel at the brewery (2 years old at that time)
Lightly yellow, hazy body. Without any head. Fresh nose of citrus, distinct amarillo, wood. Not as winey as ordinary lambic, the amarillo is definitely present. I do think their ordinary lambic smells way better, but still it smells nice. Lightly bitter, lightly sour initial flavour. Moderately bitter, moderately sour finish. Flavour of apples and a bit watery in the beginning. Well balanced, but not so complex. Nice experiment, but I think normal hops are better for great lambic.

Bottled. Hazy nut brown/amber colour with not much head at all. Aroma is sour wood, with very sour fruits as well as some slight barrel notes. Also quite barnwardish and earthy notes in the nose. Flavour is sourness from fruits and wood along with some notes od oak barrells. A really pleasant brew.

Feb - 08. 75cl bottle. 2003 vintage. Pours muddy pink (into my Cantillon stein) with a sprinkly off white head. Aroma is extreme sour, dry, woody, earthy, fruity rasperry. Sprinkly carbonation. Sour tart taste but with a ligh sweet rasperry touch in the end. Funky & Dope! Re-Rate Jan-14. At Cantillon. 2010 Vintage. Lovely intense raspberries, Wood and barnyard. Vague manuer. Elegant. 4-4,3

75cl bottle. 2003. Pours wonderful unclear pink with a fine white head. Very sour & fresh & fruity aroma and taste. Cherries & matured oak notes. Very dry & fresh taste of sour cherries. Sticky & fizzy carbonation. Typical cantillon - typical wonder journey to the "pharcyde". Re-Rate June 2010 @ Ma Che Siete, Rome. Tap. This beer is just incredible and now one of my favorite cantillon beers. So fruity, crisp and refreshing. Lovely tartness . . . 4,1 - 4,2
