Open the door of the 56 rue Gheude.
Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.

"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.

Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.

Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

(Bottle 75 cl) Slightly hazy amber golden with a tiny, off-white head. Fresh but rather mellow acidity in the aroma. Medium body and very dry but with a - for Cantillon - subdued sourness. None of the real dirty horse sweat notes either. 291006

(Bottle 75 cl) Pours a hazy, pale amber with an almost completely absent head. Sourish, fruity nose. Medium body with a marked, vinegary sourness. Not too sure I can pick up the apricots though. Sour all the way through. 291006

(Bottle 75 cl) Slightly hazy blood red - no head and completely flat. Fresh and fruity aroma with prominent cherries. Thin and somewhat watery body with acidic - but fresh - accents of cherries. Remains sourish all through the finish. 281006

(Bottle 75 cl) Slightly hazy, deep golden with no head whatsover. Distinct - yet mellow - acidic aroma with notes of horse blanket and all that. Fairly light in body, vaguely sourt with Brett accents. One of the more smooth and accessible gueuzes. 281006

Originally serious amberish head, gone fast, but transparant rim stays on; very high carbonation in rusty-orange beer. Typical Cantillon nose with leather, Brett and very fruity - but in this case, the fruit is unrecognisable; could be anything, including sloeberry with lemon. Dry, very tart fruity - again lemon, lime and lemonrind. Brett is obvious, but the tart fruit is really all-determinant. Adstrigent in the finish, long lasting fruity flavours. Very dry, very tart, hint of adstringency, acidburn. Not on this database, but I have also tasted the green gooseberry lambic (not commercialised yet) for HBL (these are red-purple gooseberry), and the verdict stays the same: I think gooseberries are not athe best option to be married with lambic. The aroma & flavour are not recognisable, and they are just blowing up the tartness.

Bottle White/blond, murky body. Slightly off-white, rocky head. Very large head, well lasting, which is quite remarkable for a Cantillon - probably due to the age (was bottled in 2001). Aroma of a lambic and wheat beer. Moderately sour, lightly sweet, fruity flavour. Typical Cantillon sourness. The flavour is ok, but not overwhelming by a good lambic-fruit combination. But it’s very subtle and well balanced.

Huge thanks to JoeMcPhee for sharing this at beastiefan2k’s place - pardon my french, but this beer is the shiznit! (I know, not the greatest word to describe such a refined beer) - beautiful red body with a slight purple hue to it - the aroma has the customary Cantillon funk, with damp oak, cherries, of course (pits and all) - very mild sourness for a Cantillon, complimented by a very subtle sweetness and acidic cherry flavor - later in the flavor, and all through the finish, there are some warming, almost Christmas-like spices that I couldn’t really identify, but they made the beer even more delicious - I will have to shell out the money for another bottle so I can spend more time figuring out what makes this beer so great.

Bottle says 2000 - Cork says 2002. Pours bright gold into a tumbler. Fluffy bright white micro head slowly recedes and leaves clumpy lacing. Crisp, sour barnyard funk. Sharp cheese with lasting sour yogurt finish.

75cl bottle Grand Cru Bruocsella Lambic Bio 2002. Massive thans to Phil L for this. Hazy gold, no head. Wonderful lambic aroma. Lemoney and horse blanket. Actually quite lovely in mouth not too sharp or acidic, but there is that cidery lemon fruit flavour. One of the smoothest lambics I’ve had. Plenty of sourness but balanced by a fullness in mouth and syrupy intense lemon curd fruit. Gorgeous. Refined. Acidic on end, but there is a bit of sweetness there. One of the best unblended lambics I’ve had. 4.2/5 2006 Re-rate at St Albans BF 2009. Best thing I had over the 2 days here and well worth the £7.50 it cost. Good dirnkability and totally immersive beer without the huge acidity that some Cantillon beers have. This is funky and good. Just a little more age perhaps would help. 4.3/5
