"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.
Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.
Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

Bottle. bottled 4 january 2021. Color: Slightly hazy orangish golden, no head. Aroma: Fruity, vinuous, tart berries, funk. Taste: Rural funk notes, fruity citrus, berries, apple, some appleskin, hints of grapefruit. Some oak wood. Dry-ish mouthfeel. Medium body, no carbonation. Over moderate tart, vinegar hints, slight sweetness.

Bottle as a birthday present from a friend. Pours dark cherry red with a decent pink-tinged white head. Aromas of funk, wood, some red grape must and general red fruit. Taste is tart, grape, woody and cherry then almond coming through. Really opens up as it warms a little. Lovely stuff.

Nose - mainly funk, wood, some red grape must and general red fruit.
Taste - tart grape, woody and cherry lozenge then coming through.
Palate - medium bodied, tart and tannins from fruit and wood barrel. Good linger.
Overall - lovely.

Bottle, bottled 18 october 2021. Color: Clear golden, thin dense white head. Aroma: Sweet and sour, fruity, subtle grapes, some wood and funk. Taste: Moderate to over moderate tart, very light bitterness. Subtle white grapes, hints of grapeskin, wood hints, funky wild yeast and some lemon. Medium body, below average carbonation. Vinuous and bit dry-ish mouthfeel. Grapes are faded over the years in the cellar. Still ok.

Aroma: nice and elegant funk with some sweetness that's probably coming from Porto barrels.
Taste: along the same lines, very intense and assertive. Port barrel is quite noticeable.
Overall: quite unusual for Cantillon and nice.

Amber, slight haze. Gentlest pop on opening, but a thick head. Beautiful vinous aroma with light brett, and a touch of port. On the palate, there's a fair bit of sweetness up front, then vinous finish, and a touch of barrel accent. It's not actually all that complex, but it does have great balance and tastes wonderful.

Poured from 750mL bottle (bottled 20 Nov 2016; cork says 2018). Orangey gold with small white head. Soft funk and grape must with a nice port note. The finish does have a metallic hint unfortunately, but otherwise quite nice. Metallic note dissipated after about 10 mins of sipping (raised overall to 8/10).
