Open the door of the 56 rue Gheude.
Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.

"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.

Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.

Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

(Bottle, 0.75l - a sample, at Stadin Panimobaari, 20251120) The beer poured ruby red and clear. Its head was small and lightly pink. Aroma had sweet cherries, tartness and fruitiness. Palate was medium bodied and dry with rather carbonation. Flavours were tartness, sweet cherries, fruitiness, grapefruit and bitterness. Aftertaste had berries, tartness and bitterness. A tasty tart brew with clean berry flavours.

(Keg at Stadin Panimobaari, 20251120) The beer poured golden and hazy. Its head was small and white. Aroma had black pepper, fruitiness, honey and tartness. Palate was medium bodied with medium carbonation. Flavours were tartness, black pepper, sourness, fruitiness, grapefruit and bitterness. Aftertaste had black pepper, tartness and bitterness. A pleasant blend of strong flavours.

Bottle pour. Quintessence 25. Served with some delicious Comte cheese, of which I had an unfair share, frankly. Yeah ace. Been after ticking this for ages. Can’t completely remember what it was like because I was a bit pissed by now.

Bottle pour. Quintessence 25. All bits of barnacles and shit stuck to the bottle but if I’m completely honest it tasted absolutely no different to the regular beer we had at the same time. This one came with seaweed tartare. As you do.

Bottle pour. Quintessence 25. Served with some beef fillet. No looker this one. Hazed dull gold with a few loose lifeless suds. Peaty and lightly acidic and not really for me. Great tick though.

Bottle pour. Quintessence 25. Paired with cherry chocolate by Laurent Gerbaud. One of the best pairings on the day. Misted deep ruby colour. Ring of pale pink foam. Loads of dessert and sour cherry. Minimal funk. Some sweetness. Great stuff.

Léger pâle, col blanc.
Arôme sur un bouquet classique de lambics Cantillon - funk, vieux cellier, cave, cuire - bouquet orienté sur agrumes citriques, - argousier reste bien présent et délicat avec un rétro-nasal sur une pointe d'acidité maîtrisée fruitée.
Palais garde bien le caractère assez unique des baies d'argousier - et de fait une acidité bien marquée rappelant des agrumes - le tout se combine bien avec le côté plus funk des lambics

Couleur léger acajou, col fin rosé-blanc-cassé.
Arôme au bouquet marqué par les lambics - funk assez distinct de Cantillon - raisin, léger floral, fruits rouges.
Palais garde une approche assez funk avec un caractère tirant sur les fruits rouges - notes framboise, cerise et léger mûres - assez sèche tout au long avec une touche rappelant le poivre blanc concassé. Effet funk perdure également.

Diluted golden with a wispy white head. A bit of must right off the bat followed by light acidic notes but not over the top- just a light amount. A bit of oak followed by earth along side a touch of well-integrated grapes and citrus notes. Medium bodied. Finish is medium-dry with light acidity. Beautiful beer.
