Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.
"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.
Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.
Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

Bottle. Nicely acidic aroma. Hazy red colour, not as deep as the kriek. Nicely refreshing acidic flavour, rounded off by a hint of fruit. Cleans your mouth efficiently after a day’s beer drinking.

Bottle. Nice acidic aroma. Hazy deep red colour. No head. The flavour is a little acidic with some mild/round notes. Quite earthy, ending on an acidic note. Very nice.

Bottled. An unclear red beer with a fast disappearing off-white head. The aroma is acidic with strong notes of berries, wine, and tea - as well as a light hoppy note. The flavor is acidic in a wonderful way with notes of acidic grapes, grapefruit, and other unripe fruits. The acidity draws the mouthwater, before a dry end sets in. Lovely. Sampled this deep down in the cellar of Akkurat October 2005, graciously served by the bars owner Sten - thank you so much!!

Bottle. Smber beer with no head. Funky aroma with some oak. Very low carbonation. Low malt and nice sour flavor - not overly sour. Some earth, citrus, oak. Nice palalte cleanser. Refreshing. Nice tartness. Oak and tartness are the main components

Tap at the HDG. Poured into a tulip glass (the kind meant for girlie drinks with small umbrellas). Color is rose pink, with orange and copper aspects. Aroma is extremely sour, tart, and acidic, more so than any bottle I have had. Tickles the nostrils. If you can keep your nose in the glass long enough there is a raspberry aroma with a sweetness that resembles wild strawberries. Taste is a bit different, the "strawberry" sweetness is gone, replaced with just an extreme raspberry tartness. Now it tickles the tonsils. Leaves the signature acidic Cantillon aftertaste.
The fun part was I got to take sips of this in between sips of the Southampton Imperial Stout. I was tempted to blend.

Tap at the Belgian Room - I stepped away from the festivities at the HDG strong ale fest, and what should I find but this gem on tap - I figured, "if any beer will wake up my palate after several hours of strong ale abuse, it’s this beer" - I was, of course, quite right - your pretty standard Cantillon aroma (barnyardy funk and tarttarttart fruits), but of course, for Cantillon, standard = fantastic - sourness that hits you right in the cheeks, making those salivary glands go crazy, whether you want them to or not - a fruitiness that isn’t distinctly raspberry, but is very earth and tart (I taste seeds and skins, people) - I’m too lazy to write more - I pretty much stopped analyzing it after two sips and just sat there saying "mmmmm" to myself - as the others around me kept talking, I slipped ever deeper into lambic-induced euphoria.

First rating(Bottle, looks about 75 cl, thanks omhper!) Bottled 2003. Shady redish brown color, small disapearing pink head. Lambic and gueuze acidic spontaneous fermented scent. Stables and grass. Grassy sour spritzy taste with a metallic aftertaste. Spritzy mouthfeel. Some bitter astringent mouth puckering feel, might be from the wine? Also some dry feeling, oak?8/3/8/3/16=3.8RerateBottled 2006 compared side by side with bottled 2007. Both on 75 cl bottles, both BB 12/2009.On March 16, 2009 2006 (Bottled 25 OCT 06) = Hazy grape color, smallish apricot to pink head. Sloe (blackthorn?), mild acidic, sweetened unripe (green) red currants scent. Sour, red berries, grape peel taste. Smooth mouthfeel, no bitterness. acidic and red berries aftertaste, also not ripe red currants. 7/4/8/4/16=3.9 2007 (Bottled 22 NOV 07) = Hazy grape red color, smallish pink head. Sour, acidic, automn forrest, fruity, red currant scent. acidic to sour, red currants when not quite ripe (green), lemon, some blueberry taste. Mix of smooth and spritzy mouthfeel. Bottle. Pours a hazy golden colour with a white head. Malty tart barnyard aroma, with hints of citrus. Sweet malty tart fruity flavor hints of citrus. Long tart sour mouthwatering finish. A nice gueuze.

Cork says 2005. Pours bright gold into a tumbler. No head -- looks like day old piss. Sharp, sour apple and oak. Dry and puckering but very flat with a lasting blue cheese finish.
