Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.
"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.
Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.
Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

750 ml bottle @ Kristiansand Lambic festival. Copper red body with a small, light pink head. Aroma is very acidic with just a hint of cherry, also a little musty. Flavor is extremely dry and acid. Subdued cherry flavor and quite pleasant in it’s own way. Authentic but a bit rough for my taste. Re-rated. A bit higher score on the overall impression this time. I might get a bit more use to this, or maybe just had a better day?

750 ml bottle. Sampled 2000 vintage at brewery and 2003 vintage @ Kristiansand Lambic festival 2007. Aged version was best. Cloudy orange body with a very small white head. Aroma has a fruity citrus impression with a pleasant cellar note. Flavor is rather sour and bitter. This beer is much better than my description indicates.
re-rated 30.06.2010 Sampled at Patricks. Hazy orange body with a thin white head. Aroma is Fruity and acidic. Flavour is fruity and pleasant acidic with light malt and a hint of bitterness. A nice lambic that’s more balanced compared with other unblended lambics I have sampled.

Re-rated in 2012. On tap @ Patricks. Hazy orange body with a small off-white head. Nice funky aroma with fruit and particular citric fruit. Flavor is sour acidic and somehow a bit sweet at the same time. It’s not to funky but everything from a real lamic is present in a rather balanced way. Fine body and pleasant in aftertaste. A nice one for sure.
750 ml bottle tasted in 2007. Pale, hazy orange body with a small white head. Aroma is really strange, sourness with a hint of mild vomit! Flavor is sour with sweet peaches. Not really balanced in my opinion. 2-3-4-3-6

[i] Bottle, Picked up at Noel Cuviers, Abel, West Flanders Belgium, Late June 07[/i] Poured raspberry red with great pink head. Aroma had some raspberry there but quite sour and a bit musty and woody. Flavours were acidic, sour but not as sour as expected, a hint of raspberry, and very dry.

[i] Bottle, Picked up at Noel Cuviers, Abel, West Flanders Belgium, Late June 07[/i] Poured light orange in colour, with lively fizziness and nice swiftly disappearing white head. Aroma is oak, sour and yeasty. Taste is glorious, initially it’s like biting into a stick of rhubarb not that there is any rhubarb flavour but just for that great sharp crisp bite. Wonderful sourness and complex flavours such gentle carbonation as well, it’s fruity, its lemony its funky, fab beer.

[i] Bottle, picked up from Noel Cuviers, Abel, West Flanders, Belgium Late June 07 [/i] This poured a lucious hazy raspberry red colour with very little head to speak of. The aroma was superb with sour cherries dominating, taste was more of the same along with some oakiness and stunning dryness, rips through the roof off your mouth and then proceeds to awaken every single tastebud, with that sour, sharp cherry buzz. Lovely, just sit back and savour.

I too never thought I would get a chance to try this, thanks for sharing. Poured yellow with a small head. Aroma is the signature acidic and sour Cantillon, no way could I tell this was almost 10 years old. Taste is nicely subdued for a Cantillon while still sour and acidic. A nice fruitiness has emerged and a nice herbal aspect to round it off. Sooo good.

Bottle Blond, hazy body without any head. Citric aroma (Cantillon gueuze like - but not totally) of flowers, citrus, oranges (lightly). Heavily sour initial flavour. Moderately sour, lightly bitter finish. Winey flavour of citrus and oranges. Very good and quite different from the ordinary Cantillon lambic.
