Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.
"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.
Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.
Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

Tasted at Cantillon, Brussels. Sour barnyard aroma. Extremely sour, bu the cherry is clearly there and like Gambrinus, this is real fruit flavor and not a syrup. Red color. Excellent.

Tasted at Cantillon, Brussels. A very sour aroma with barnyard and sour characteristics, as well as light fruit. Sour raspberry flavor. Clearly natural raspberry. A red beer and heavily carbonated. Yeasty aftertaste. Outstanding.

Sampled at the O-Town throwdown. Poured almost like pinkish red wine with thin white head. The aroma is big with tart berries, plan old tartness and some sourness. The flavor start off tart berry fruitiness followed by some tartness and then sour funkiness. Nice mixture.

Brown bottle, 750 ml, bottled in 2006, best before 12/2015, purchased on February 11 2007, "savoured" on March 3 2007; eye: cherry, small pinkish head that disappears almost immediately, clear, no ’effervescence; nose: sour dominates everythin, cherry, a bit of wood, a bit of horse; mouth: sour, strongly astringent, a bit of cherry, acidic, finale is sour with a hint of sourness, medium body, quite carbonated, rather thin texture; overall: disappointing as it is too one-dimensional FRANÇAIS Bouteille brune, 750 ml, embouteilée en 2006, meilleure avant 12/2015, achetéle le 11 février 2007, « savourée » le 4 mars 2007; oeil : cerise, petite mousse rose qui disparaît presque immédiatement, claire, pas d’effervescence; nez : sure est dominant, cerises, léger boisé, léger cheval; bouche : sure, astringence prononcée, un peu de cerises, acidité assez présente, finale sure avec une pointe de sure, corps moyen, assez carbonatée, texture un peu mince; en résumé : déçu car un peu trop unidimensionnel

Bottle. 2003. Pours a hazy golden color with a white head. Fruity malty slightly tart barnyard aroma. Sweet malty and fruity flavor with sour tart hints. Also some hints of hops. Dry malty finish with some fruity sourness in the finish.

2006 Botle from Ledgers; Nose of horse blanket, cherries, and some woodiness; raspberry colored with a medium pink head; flavor sharp tartness and some light cherries, the tartness lasting into the finish.

I am told this is the 2007 version Superb cyclamen colour with a pink rim. Looks just - inviting... Apples, cyanide, overpowering fruit aroma, like a fresh fruit drink. Milder, softer fruit taste; full-fruity. Like a sourish old sherry, mixed with cider (there IS an apple-component in this one). Actually the real acidity is probably way higher than the sour impression - it’s just too fruity. Thank God. The kind of berry is unidentifyable. Well bodied, acidity nothwithstanding, not becoming thinnish. SUPERB! Great! Gawdelpus, can we get this at home, please!!! Thanks a LOT to MIkkel! 2011 batch Superb red purple head gone in secs. Deep purple/magenta beer. 5/5 Cuberdons , sweet berries and fruitconcentrate 7/10. Dry, tart, but nowhere exaggerated; in fact it is much less than the 2007 version. Lacks also some "lambicness", as the barnyard, horseblanket, ... features. 8/10 Tart, slight dry-our effect, cassis in the finish. 4/5 A lot less explosive, mind-blowing than the first version. 16/20

Pours a hazey straw color with light, suspended carbonation. It smells funky and tart. The assertive flavor has sour citrus fruit and some of that lambic funk. The finish is dry and kind of refreshing.
