Description
In 1994, just as the fledgling craft beer industry was starting to gather steam in Colorado, Mike and Amanda Bristol settled comfortably in the lap of Pikes Peak and started hand-brewing fresh, distinctive ales for the locals in Colorado Springs.
Today, our beers are available on draught and in six packs, four packs, and bombers across the state. And Mike and Amanda have been joined by a cast of characters that make magic happen at Bristol every day. Collectively, we are a family of smart, friendly people who really love beer. We love the glorious flavor. We love the global tradition and history. We love the art and science of brewing. And the pure contentment of enjoying a pint at the end of the day.
In 2013, we moved lock, stock, and barrel into a former elementary school, where we happily ignore school rules by brewing and serving beer in the classrooms, including our onsite pub. Built in 1916, the building’s hardwood floors and brick walls, former gym and student artwork radiate charm and a hip but super-friendly vibe.

Bottle. Pours a black color with no head. Has a sweetish malty soy and caramel aroma with some hints of licorice and honey. Sweetish warming roasted malty caramel and honey flavor with hints of toffee and some weak hints of coffee. Has a warming roasted malty chocolate and toffee finish with some hints of honey in the aftertaste.

Bottle via a trade with jbye4334. Pours with a large white head over a hazy golden body. Aroma is a fresh hand full of hops. Citrus and some light crystal. Taste is hoppy, honey and citrus. Medium bubbles. A solid pale ale.

2009 bottle thanks to jbye4334. Pours with a small and fading tan head over a very deep mahogany to ruby body. Aroma is quite pungent with dark fruits, raisins, toffee, port, sherry, cocoa, chocolate, plums, rum cake. Some oatmeal raisin cookie. Alcohol, dark fruits, sherry and a bit of soggy malts (wet dog) on the flavor. Decently sweet and decadent up front. Long duration, slightly bitter finish. Some bitter dark fruit and bitterness from tannin extraction from the grain. Full bodied. Alcohol is noticeable, but has mellowed enough so that it is not burning or presents itself as fusel. Full weighted mouthfeel, light bubbles and syrupy.

After a good experience with their IPA, I picked this one up, and I’m kind of sorry I did - huge diacetyl bomb, both in the nose and flavor - the sad thing is, it tastes intentional - there are some plum notes, roasted nuts, a mild bitterness - there is some decent stuff happening, but the diacetyl is a huge distraction - too bad.

Cloudy orange brew - a thin ring of soapy lace - a nice mix of chinook and cascade in the nose, mixing with a balancing malt sweetness, creating complex notes of citrus - medium to low carbonation - fairly potent bitterness, with quite a bit of floral, grassy hops - nicely balanced by moderate malt sweetness - nothing original, nothing exceptional, just a very well-executed ipa.
