Today, our beers are available on draught and in six packs, four packs, and bombers across the state. And Mike and Amanda have been joined by a cast of characters that make magic happen at Bristol every day. Collectively, we are a family of smart, friendly people who really love beer. We love the glorious flavor. We love the global tradition and history. We love the art and science of brewing. And the pure contentment of enjoying a pint at the end of the day.
In 2013, we moved lock, stock, and barrel into a former elementary school, where we happily ignore school rules by brewing and serving beer in the classrooms, including our onsite pub. Built in 1916, the building’s hardwood floors and brick walls, former gym and student artwork radiate charm and a hip but super-friendly vibe.

Nitro pint at the brewery. Pours a clear, amber color, with a lovely, massive, fine, nitro head. The nose is pine sap, caramel, musty straw, and rosemary. Fairly dry, with a bracing, sticky bitterness. Medium body, biting, and clingy. Nice, aggressive IPA.

Taster at the brewery. Pours a clear, light amber color, with a medium, foamy, khaki head. The aroma is pine, orange peel, hay, rose, and biscuit. Sweet and malty, with a crisp, resinous bitterness. Medium body, a bit sticky, and clean. Reasonable.

An amber beer, a head is medium and blond. Aroma has pine and caramel, light fruitness and wood. Taste has the same elements, pine, caramel, light fruitness, medium bitterness. Medium bodied. Could be more fruitful.

I was fortunate to locate a 750 bottle of Tripel at Downtown Fine Spirits and Wines in Colorado Springs last month, by other sources it appears Bristol may not brew this beer any longer. No matter to me, I have it to sample and so I will. I take off the cage and remove the cork to a hearty pop. The view is a cloudy, dark gold followed by a decent but promptly settling head of almost white foam. The scent is appropriately decent with yellow fruit, yeast and biscuits. I take a taste and find apricots, citrus, white bread, hay and some earthiness. Equal measures of sweetness and bitterness, I think, not much of either. A straight-forward tripel, no flash. Not that there is anything wrong with that.

My first visit to the brewery and I hoped to sample their quadruple as it was shown to be available from the website. Not to be. Instead I had a 12 oz bottle-pour of Old No. 23 into an appropriate glass for the style. It showed just short of black finished by a light tan skim. The smell was muted ripe fruit. And the taste included plums, cereal and malt. An okay brew.
