Description
In 1994, just as the fledgling craft beer industry was starting to gather steam in Colorado, Mike and Amanda Bristol settled comfortably in the lap of Pikes Peak and started hand-brewing fresh, distinctive ales for the locals in Colorado Springs.
Today, our beers are available on draught and in six packs, four packs, and bombers across the state. And Mike and Amanda have been joined by a cast of characters that make magic happen at Bristol every day. Collectively, we are a family of smart, friendly people who really love beer. We love the glorious flavor. We love the global tradition and history. We love the art and science of brewing. And the pure contentment of enjoying a pint at the end of the day.
In 2013, we moved lock, stock, and barrel into a former elementary school, where we happily ignore school rules by brewing and serving beer in the classrooms, including our onsite pub. Built in 1916, the building’s hardwood floors and brick walls, former gym and student artwork radiate charm and a hip but super-friendly vibe.

I had a pint drawn at the brewery and shared a seat outside with a friendly yellow lab and a Visla. The view was a clear gold with a steady cover of totally white foam. And with a drink I tasted cedar, biscuit, malt and a bit of pineapple. Sort of a down-the-middle IPA, nothing really standing out this time. Moderately all right.

Can at the flat in Sofia - sourced from 100 Beers online. Pours clear gold with a foamy, white head. Medium sweet flavour with nice pine needle bitterness, semi-ripe tangerine, orange, some bready pale malts, grass. Light bodied with fine, massaging carbonation. Sturdy piney-grassy bitterness to finish, some citrus rind, more juicy tangerine, lemon, grapefruit. Good stuff, nice drinking beer.

2018 Vintage, claimed to be 9,3, but I don't see any official indication on the bottle about alc content. Smell- weak to medium, malt, caramel, faint roast, whisky/brandy-ish, alcohol-ish feel. Nice. Foam- thin, malt, sweet, weak roast, caramel, acidic tones, warmth. Head is small, light brown-white color. Appearance- brewer bottle cap, somewhat simple label. Dirty, orange, brown color, no carbonation. From - snifter Taste - sweet, malt, bit acidic, bit of roast, slowly creeping alcohol, but blended in ok. Woody, faint sourness mixed in, dried plums. Weird, but quite good. Definitely not my favorite, but worth trying.
