Description
In 1994, just as the fledgling craft beer industry was starting to gather steam in Colorado, Mike and Amanda Bristol settled comfortably in the lap of Pikes Peak and started hand-brewing fresh, distinctive ales for the locals in Colorado Springs.
Today, our beers are available on draught and in six packs, four packs, and bombers across the state. And Mike and Amanda have been joined by a cast of characters that make magic happen at Bristol every day. Collectively, we are a family of smart, friendly people who really love beer. We love the glorious flavor. We love the global tradition and history. We love the art and science of brewing. And the pure contentment of enjoying a pint at the end of the day.
In 2013, we moved lock, stock, and barrel into a former elementary school, where we happily ignore school rules by brewing and serving beer in the classrooms, including our onsite pub. Built in 1916, the building’s hardwood floors and brick walls, former gym and student artwork radiate charm and a hip but super-friendly vibe.

Tap at the brewery. Pours a clear, reddish-brown color, with a big, frothy, off-white head. The aroma is nutmeg, pumpernickel, walnut, and peat. Sweet and malty, with a light, savory bitterness. Medium body, dusty, and crisp. Nicely made and enjoyable.

Taster at the brewery. Pours a clear, straw color, with a fair, frothy, white head. The nose is caramel, pine sap, chalk, grapefruit, rose, and quinine. Dry and vaguely yeasty, with a big, resinous bitterness. Medium body, sticky, and pretty lively. Nice, aggressive, and distinctly lager-ish.

Taster at the pub. Pours a clear, straw color, with a small, white head. The aroma is lime juice, light tropical fruit, coriander, and coconut water. Sweet and sugary, with a light acidity. Light, sharp, and clean. Easy and tasty enough.

--Sample, thanks oh6gdx! -- Paleish amber, rich creamy head. Hay and grapefruit meets caramel up front. Mid sweet with above medium body and rounded mouthfeel. Hay and bread, some dried grapefruit. Long bitter finish.

Can (from Alko web). Goldeny amber colour with a small foamy white head, which leaves good lace. Aroma is floral, some fruity, mild wooden as well as some biscuity and toffeeish tones too. Flavour is sweet malts, toffee, some creamy tones with mild floral, fruity and some sweet wooden and pine tones to it. Mellow floral bitterness.

Amber, clear with a large creamy off white head. Aroma of malt, caramel, hops and fruits sense. Lots of bitterness with a caramel, fruit and malt end.

Taster at the brewery. Pours a clear (eh?), golden color, with a small, white head. The aroma is grapefruit, quinine, straw, light butterscotch, and perfume. Sweet and malty, with a mild, zesty bitterness. Light to medium body, crisp, and a bit sticky. Pretty nice.
