Description
In 1994, just as the fledgling craft beer industry was starting to gather steam in Colorado, Mike and Amanda Bristol settled comfortably in the lap of Pikes Peak and started hand-brewing fresh, distinctive ales for the locals in Colorado Springs.
Today, our beers are available on draught and in six packs, four packs, and bombers across the state. And Mike and Amanda have been joined by a cast of characters that make magic happen at Bristol every day. Collectively, we are a family of smart, friendly people who really love beer. We love the glorious flavor. We love the global tradition and history. We love the art and science of brewing. And the pure contentment of enjoying a pint at the end of the day.
In 2013, we moved lock, stock, and barrel into a former elementary school, where we happily ignore school rules by brewing and serving beer in the classrooms, including our onsite pub. Built in 1916, the building’s hardwood floors and brick walls, former gym and student artwork radiate charm and a hip but super-friendly vibe.

Draft at the brewery in CO. Hazy medium gold color with a white head. Slight hoppy aroma. Tastes like a pale ale with some fruity hops. No lager flavor here. Limited malt notes.

Draft at the brewery in CO. Mostly clear yellow color with a white head. Crisp mouthfeel, but not sharp. Not too bitter either. Kinda generic. Light and easy drinking.

Draft at the brewery in CO. Clear, very dark mahogany color with a beige head. This has way more tart blackberry flavor than porter flavor. Tastes more like liquid jelly than a beer. The porter helps cut the tartness a little, but not enough IMHO. Disappointing.

Bottle. Pours a clear golden amber color with a small white head and fair retention. Has a nice caramel flavor without being too sweet or too hoppy. Smooth and clean. Nothing unique, but very repeatable.

Got in a trade with beergoot. 12 ounce bottle into weizen glass, no bottle dating. Pours fairly hazy medium golden yellow color with a 2 finger dense and rocky off white head with fantastic retention, that reduces to a large cap that lasts. Thick foamy lacing clings on the glass, with a moderate amount of streaming carbonation. Fantastic appearance. Aromas of big lemon, orange, grapefruit, banana, bubblegum, peppercorn, clove, peach, pear, apricot, mango, melon, passion fruit, berries, citrus peel/zest, pine, wheat, cracker, white bread dough, herbal, floral, grass, and yeast earthiness. Damn nice aromas with great balance and complexity of citrus/tropical/earthy hops, fruity/spicy yeast, and pale/wheat malt notes; with big strength. Taste of big lemon, orange, grapefruit, banana, bubblegum, peppercorn, clove, peach, pear, apricot, mango, melon, passion fruit, berries, citrus peel/zest, pine, wheat, cracker, white bread dough, herbal, floral, grass, and yeast earthiness. Light-moderate pine, citrus peel/rind, herbal, floral, grassy bitterness; and pepper/clove yeast spiciness on the finish. Lingering notes of lemon, orange, grapefruit, banana, bubblegum, peppercorn, clove, peach, pear, apricot, mango, melon, passion fruit, berries, citrus peel/rind, pine, wheat, cracker, white bread dough, herbal, floral, grass, and yeast earthiness on the finish for a good bit. Great complexity, robustness, and balance of citrus/tropical/earthy hops, fruity/spicy yeast, and pale/wheat malt flavors; with an awesome malt/bitter/spiciness balance, and no astringent flavors after the finish. Fairly crisp finishing. Medium-plus carbonation and light-medium body; with a very smooth and moderately creamy/bready/grainy/sticky balanced mouthfeel that is great. Zero warming alcohol as expected of 5%. Overall this is an excellent hoppy hefeweizen. All around great complexity, robustness, and balance of citrus/tropical/earthy hops, fruity/spicy yeast, and pale/wheat malt flavors; very smooth, crisp, and refreshing to drink with the modestly bitter/spicy/drying finish; not aggressive. Very flavorful and not watery for the ABV. Awesome balance of juicy/vibrant/earthy Simcoe hops and classic German yeast complexity; with a great clean pale/wheat malt backbone for the ABV. Mild residual sweetness with crisp drying. A very enjoyable offering, and spot on base style example.

Pours fairly hazy/cloudy deep orange/copper/amber/light reddish color with a 1-2 finger fairly dense and rocky cream colored head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a light amount of streaming carbonation. Aromas of big caramel, brown sugar, brown bread dough/crust, toasted biscuit, and nuttiness; with lighter notes of roast, golden raisin, peach, plum, pear, apricot, red apple, peat smoke, wood, leather, tobacco, herbal, grass, pepper, and yeast/toasted earthiness. Damn nice aromas with great balance and complexity of dark/bready/light roasted malts and light-moderate fruity yeast/earthy hop notes; with big strength. Taste of big caramel, brown sugar, brown bread dough/crust, toasted biscuit, and nuttiness; with lighter notes of roast, golden raisin, peach, plum, pear, apricot, red apple, peat smoke, wood, leather, tobacco, herbal, grass, pepper, and yeast/toasted earthiness. Light herbal, woody, grassy, peppery bitterness on the finish. Slight tart English yeast. Lingering notes of caramel, brown sugar, brown bread dough/crust, toasted biscuit, nuttiness, roast, light fruits, peat smoke, wood, leather, tobacco, herbal, grass, pepper, and yeast/toasted earthiness on the finish for a while. Awesome complexity, robustness, and balance of dark/bready/light roasted malts and light-moderate fruity yeast/earthy hop flavors; with a great malt/bitterness balance, and no cloying/astringent flavors after the finish. Lightly increasing dryness from lingering bitterness. Medium carbonation and medium-full body; with a very smooth, creamy/bready/grainy, and lightly sticky mouthfeel that is great. Minimal warming alcohol for 6.9%. Overall this is an awesome scotch ale. All around awesome complexity, robustness, and balance of dark/bready/light roasted malts and light-moderate fruity yeast/earthy hop flavors; very smooth and easy to drink for the ABV, with the mellowly bitter/drying finish; great soft feel. Awesome rich and well rounded English malt complexity; with mellow earthy EKG hops, and restrained fruity English yeast. Light residual sweetness with lingering dryness. A really enjoyable offering, and spot on style example all the way through.

12 oz. bottle from the mix-six cooler at Coaltrain. Pours a clear, brown color, with a small, bubbly, beige head. The aroma is mild cocoa, bitter herbs, brown bread, toasted oak, and toffee. Sweet and malty, with an unpleasant bitterness. Light to medium body, with a syrupy, clingy palate. Pretty nice, but nothing special.

Aromas of mandarin orange, red grapefruit, lemon, lime, peach, pear, pineapple, apricot, passion fruit, papaya, mango, honeydew melon, guava, blueberry, gooseberry, citrus peel/rind, wood, peppercorn, pine, honey, biscuit dough, toast, light caramel, and herbal/floral/grassy earthiness. Nice and pleasant aromas with good balance and complexity of citrus/fruity/tropical/fairly earthy hops and bready malt notes; with solid strength. Taste of big mandarin orange, red grapefruit, lemon, lime, peach, pear, pineapple, apricot, passion fruit, papaya, mango, honeydew melon, guava, blueberry, gooseberry, citrus peel/rind, wood, peppercorn, pine, honey, biscuit dough, toast, light caramel, and herbal/floral/grassy earthiness. Light-moderate pine, citrus peel/rind, herbal, floral, woody, grassy, peppery bitterness on the finish. Light-moderate increasing dryness from lingering bitterness. Medium carbonation and body; with a very smooth, moderately creamy/bready/grainy/sticky, and fairly crisp/resinous/rindy balanced mouthfeel that is great. Zero warming alcohol as expected of 5.2%. Overall this is a delicious American pale ale. All around great complexity, robustness, and balance of citrus/fruity/tropical/fairly earthy hops and bready malt flavors; very smooth, refreshing, and fairly crisp to drink with the modestly bitter/resinous/drying finish; not aggressive. Very flavorful and not watery for the ABV. Awesome Mandarina, Citra, Mosaic, Azacca profile. Very juicy, vibrant, and fairly dank/earthy hops; with a great clean bready Vienna malt backbone for the ABV. Mild residual sweetness with crisp resin drying. A very enjoyable offering, and impressive spot on style example. Loved the hop profile as expected.

Taste from a bottle at the Colorado Springs Wine Festival. Pours a hazy yellow, with a small, bubbly, white head. The aroma is black pepper, straw, sourdough bread, and coriander. Dry and dusty, with a mild bitterness. Light to medium body, with a sugary, acidic mouthfeel. This is a nicely dry and interesting saison.

Foggy light amber colour. Medium-sized white off-white head. Nose: honey, nectar, sugared fruit, pith. Medium body. Taste: bittersweet. Solid malts. Honey. Fruit, pith. Medium bitterness. Old. Could have been better as a fresh brew.
