- light pink purple color. Slightly phenolic lactic berry character that reminds me of haskup berry, slight tartness. The palate is much more tart than the nose but i don’t know if it’s the berry or what but I get a lot of plastic. If it is the berry it’s really one dimensional and disappointing.

750 ml bottle from the brewery. Nose is tart and bretty, with lemon, grapefruit, leather, horse blanket. Huge bretty funk. Light notes of tropical fruits in there as well. Bright golden color, clear, with a lovely, big head. Tangy and fruity flavor, dusty old leather, tropical fruit come out more in the mouth. light and crisp, tart but not sour. Papaya and a hint of pineapple. Funky, bitter finish. Great. Slightly cleaner and tarter than the Japonica, while that one has more complex grain notes.

Tap at Komachi. Hazy amber-orange-brown with a low, thick head. Nose is vanilla, chamomile, fig, sakura mochi. Sweet, spicy, fruity and herbal. Definitely cherry leave rice cakes, chamomile and dried fig notes. Very unique and tasty, though too sweet to drink a lot. Dessert beer.

750 ml bottle from the Brewery. Pours a clear, deep golden orange with a medium but thick head. Nose is very bretty, with hay, leather, dusty notes, plus a deep fruitiness as well: fresh prunes, dried apricots, lemon, sultana. Fabulously complex. The flavor is funky brett with huge fruitiness. The middle is sweet, dried and fresh stone fruits, with honey and a touch of chocolate, and the finish is very dry and slightly dusty, tangy as well. There is a slight prickliness from the sansho in the finish too. The grains are complex, but it is hard to sort out the rye and brown rice individually, especially after the brett got at them. I think I get a bit of genmai in the mid palate, though. Full body but snappy carbonation. This has had 17 months of maturation and is quite lovely. Would like to see how dry it can get. Very good one, almost great. Hope they make more of these!

Bottle from the brewery and a sample there on tap. Pours out a lovely hazy gold, bright and effervescent, with a tall, airy, purely Belgian head. Nose is definitely ume (prunus mume fruits), with bready malts and estery Belgian yeast. There is a bit of banana, peach, and lemon in the background too. Flavor is sweet and tart. Sweet grainy malts, tart plum wine, and a bit of the sugar of the wine as well. Again, the yeast character is spicy and estery. I find it just a bit too sweet, in the same way that commercial plum wine is just too sweet for me. It makes the body a bit heavy too. There is a nice tartness though, and a lovely saison character. The use of plums is good in that they don't dominate, although I would like just a little more of their tartness to come through. Still, a nice one. It was slightly lighter on tap.

Tap at Komachi. Pretty black and shiny. Rich chocolate nose, milk coffee, vanilla. Sweet chocolate and vanilla flavor, cocoa nibbs. Tasty. A bit too sweet for my preference but well done.

Bottle from the brewery. Estery, fruity, hoppy nose. grapefruit, orange, something like Belgian yeast spice although this is fermented with champagne yeast. Slightly vinous. light tropical fruits. Hazy bright gold with a pretty head. Juicy, fruity flavor, grapefruit, lemon, a bit dank, a bit spicy. Yeast makes it seem Belgian in the flavor too. A bit heavy on the malt. Could use a bit more carbonation to lift it up. Pretty tasty though.

Bottle from the brewery. Good nose. tropical fruit, orange-grapefruit juice, pineapple, light wheaty malts. Cloudy, deep golden orange, a bit muddy maybe. Tall head. Tangy citrus and tropical fruit flavor, mango, papaya, orange and grapefruit. Wheat, malt, light bitterness. Light fruity dankness. Already a few weeks old, but still darn good.

Bottle from the brewery. Very hazy pale gold with a low, airy head. Juicy, fruity hop nose, grapefruit, a touch of spicy rye, some tropical fruit. Flavor is juicy hops, grapefruit, orange, malt, rye, grains, peppery, spicy finish with a touch of resiny pine. This one has suffered from the bottling. Carbonation is too low. Body seems lighter too. Still nice, but on tap at the brewery it was much more characterful.

Bottle from the brewery. Pours a salmon pink color, slightly hazy, with a medium, bubbly head. Nose is raspberry, strawberry, creamy lactic acid, lemon. Flavor is tart strawberry and raspberry, citrus, light cream, bit of sugar sweetness. Light, tart, super crisp. Not actually sour, but tangy and fruity. I like that it has almost no residual sweetness. Finishes dry. Great summer refreshment and I think it was even slightly more flavorful on tap.
