About
A wise friend once told us to “brew the beers you want to drink.” We took that advice to heart. While there are many great beers brewed in Japan, we still felt that there was something missing--no one brewery that fully satisfied all of our beer desires. We started KBC to fill that desire, believing that there were many others out there who felt the same way and would rally behind our products.
For our inspiration, we looked to the two brewing traditions that excited us the most: American and Belgium.

American craft beer has done more to change the face of the brewing world in the last 30 years than anything else out there. New hops, new styles, new hybrid beers, new extremes of high (and low) ABVs and IBUs. This is what we aspire for; never being afraid to try something new just because it hasn’t been done before or someone tells you that it can’t be.

Belgium is much more steeped in history and tradition, but is just as willing to continue doing what works for them, not what others tell them they should do. Effects from different yeast, both selected and wild; different taste sensations from the sweet, to the dry, the light, the heavy, the bitter and the sour, Belgian beer has been hugely varied and complex in both its methods of production and results.

While beers from both of these traditions are interesting on their own, we feel that combining our favourite aspects from both produce a more unique and rewarding product.
Our house yeast is a Belgian strain. The majority of the hops we use are American. Combining both in interesting and unique ways makes for inspired beers, flavourful products, and a really fun brewing experience. This is our starting point. Where our journey will take us and what beers we will make in the future, we do not yet know.

Tap at the brewery. Pretty, deep pastel gold, cloudy, with a thick, fine head. Rather plain nose, wheat, light esters. Rich wheat malt flavor, bread, some biscuit, light citrus hopping, orange. Crisp and refreshing.

On tap at KBC. Kurayami no Senko Peppery & cocoa powder aroma. Medium to full bodied. A very green hop character with cocoa powder notes. A smooth hoppy black beer.

Tap at the brewery. Bright, glowing, cloudy golden orange. Great grassy, herbal noble hop nose, seems very dry hopped, and noble. Light crackery malt with some wheat. Nice citrus flavor, orange, light tropical fruits. Good spring feeling.

Tap at the brewery. Dark shiny black with low foamy lace. Nose of chocolate, spice, orange, bread, light berries. A bit plain flavor, but easy drinking and well but together with a very dry finish. Somewhat light in body.

Haru no Kimagure on tap at the brewery. A golden color with a filmy white head. It’s got a floral wheat aroma. Medium to light bodied with a dry finish. Chewy wheat, floral and citrus zest aroma quite nice but I preferred winter.

Mugen On tap at KBC. Spicy cinnamon & cloves aroma. Medium to light bodied with a round mouthfeel. Roasty, a bit acrid, wheat flakes, chocolate and phenolic notes. Alright.

Pitch black color. Huge coffee and roasted malt nose. The coffee is over the top. Smooth body lots of roasted character and coffee. Amazing coffe stout

Tap at Gremlin. Huge roasted coffee nose with some light chocolate. Light bodied with average carbonation. Alcohol is amazingly well hidden. Really drinks like an iced coffee coming up to room temperature. Slghtly bitter, but not overly so. Finish has some roasted coffee bitterness and a bit of acidity from the Ethiopian coffee (my guess is natural processed Ethiopian coffee) that shows up as blackberry, plum and raisin on the finish. Tap at Komachi and Len. Shiny black with a fine, tan head. Spicy Belgian yeast nose, chocolate, licorice, orange. Decent hops. Dry, spicy flavor, dark chocolate, lots of licorice from the yeast, cocoa, a bit of coffee. Medium body. Very dry. Like a slightly hoppier version of Double Dragon. I would kick it up a notch more and leave a bit more maltose behind.
