Fermenting since 2014 with only wild brattleboro mixed culture yeast. continually pushing boundaries of new sour beer. brewhouse fueled by wood, not fossils.

To truly understand terroir and wild yeast, a brewer must come to terms with the type of beer that “wants to be made” in their region. We are proud of Brattleboro’s wild yeast for its balance, its stone fruit and pecan character, and how dry and effervescent it leaves the beer. We are grateful to our region’s farms for the availability of world class hops and fruits, as well as to our area distilleries for unique and beautiful oak barrel flavor histories.

We delight in making beer that could only be made in our place, with our team, supported by our community and environment.

Poured into a tulip, the appearance was a ruddy brown color with an ever so sly film of a white head. Stringy lace quickly slides.
The aroma starts off with the sour to semi-sweet apple vinegar normally associated with their beers. Some faint rye underneath.
The flavor leans puckering sour with a sparkle of the dry woodiness. Green apple sour aftertaste and quick sour dry finish.
On the palate, this one sat about a light to medium on the body. Mild carbonation. Very puckering sour exacting some tart dry woody feels along my tongue.
Overall, as a sour ale it works for it’s simplicity but fans of rye barrel beers are probably going to be disappointed.

Can shared by Kyle, thanks! Pours a clear gold with a slight amber hue and a near white head that dissipates to the edges. Aroma has a combination of earthy tart and sweet raspberries with a grain backbone. Flavor has more sour raspberry with some light acid and a touch of earthy grain backing.

Can. Craft Beer Cellar, Waterbury, VT. 6.5%. Hazy gold. Film of white head. A little leggy. Nose has gin botanicals. Soft yeast fruitiness. Sweet malts. Pale honey. Nice oak and Riesling grape character. Taste is tangy and crisp, woody dry. Clean as a whistle mouthfeel. Bright and light. Woody, botanical gin vibe on the finish.

Can courtesy of Reynolds 314, thanks! Cloudy reddish purple color, light pink head. Nice aroma of overripe raspberry with a touch of background roast. Taste is tart raspberries, sour lemon. Tasty.

Tap. Reservoir, Waterbury, VT. Hazy, light gold. Thinnnest ring of white head. Nose has baked apple. Cider lolly. Mouldy lemon bloom. Some bready, apple pie sweetness. Taste is earthy, sour apple tart. Some sweetness on the lips. Light body. Maybe a little watery. Bright and breezy. Finish is mostly dry, with more apple tartness.

Tap. The Archives, Burlington, VT. Hazy, bronze tinged, ruby red. No head. Nose has ripe cherry. Ripe raspberry. Balsamic vinegar. Some woody notes. Some soft vanilla. Some toffee. Taste is mostly tart and woody, with some ripe fruit sweetness. Some acidity on the palate. Tartness on the finish dries out by the close.

Tap. The Archives, Burlington, VT. Opaque, dirty straw colour. Barely a head. Nose has damp grain and wheat. Citric hop. Grapefruit juice. Sour lemon. Smells like a kettle sour. Taste is light, woody and tart. Lots of lemon rind. Hint of bitterness. Clean mouthfeel. Light body. Tart and light bitter finish.

Draught at Ginger Man Boston, 11/11/16.
Cloudy bronze, though not intensely so. Off-white head atop is rather wispy, showing low retention.
Earthy, spicy, vegetal, peppery notes in the nose combine with fruity yeast esters and souring agent influences. Almost a bit of vanilla character on the finish, with light honey and biscuit character noted, as well.
Quite an interesting, varied character the flavor has, with very light earthiness at times, and others a sour, lightly spicy character. Very dry, with a good deal of lactic character, but enough residual sugar to help balance and keep it drinkable, especially given the high abv. As with Earth Eagle, Hermit Thrush’s beers are very challenging to describe/rate. I quite enjoyed this one, though, and it’s actually well-balanced.

Paid $9.25 for a 16 oz. can purchased at CBC Waterbury, VT. What up, pricy? Damn... The gin is subtle, weak honey, mild Belgian yeast.

Flavor is pretty nice, light spice, fruity yeast for the backbone. Honey complements the subtle gin influence in the finish. The flower notes of the gin are very mild. In fact had I not known this was aged in Gin, I don’t think I could have picked it out. Good brew for sure even if on the pricy side.

16 oz. can purchased at CBC Waterbury, VT. Dirty orange in color with low carbonation. Aroma is mostly Brettanomyces Claussenii with notes of vinegar. Oh boy... Why did I buy this?

Flavor about what you would expect, a mega ton of Brett C, notes of Band-aid, steady amount of lactic acid. Gives me heart burn. Although I have enjoyed some Brett IPA’s in the past, I am not a huge fan of this.
