Ancient Beer, Modern Method.
Fermenting since 2014 with only wild brattleboro mixed culture yeast. continually pushing boundaries of new sour beer. brewhouse fueled by wood, not fossils.
To truly understand terroir and wild yeast, a brewer must come to terms with the type of beer that “wants to be made” in their region. We are proud of Brattleboro’s wild yeast for its balance, its stone fruit and pecan character, and how dry and effervescent it leaves the beer. We are grateful to our region’s farms for the availability of world class hops and fruits, as well as to our area distilleries for unique and beautiful oak barrel flavor histories.
We delight in making beer that could only be made in our place, with our team, supported by our community and environment.

This was poured into a tall tulip.
The appearance was a glossy burnt orange color with a nice cloudy/hazy body to it. No head, no lacing.
The aroma starts off with fresh green apple, some lemon peel, and some freshly cut grass, light apple cider.
The flavor brings together all of the previously mentioned aromas to mainly be sour. Slick sour green apple aftertaste runs into the aftertaste and slides into the finish.
On the palate, this one sat about a light to medium on the body with a nice sipping quality to it. Sourness hits in a semi-sticky manner, not syrupy, not cloying, but kind of smooth.
Overall, this was a decent sour/wild ale, maybe again, good for this time of the year,

The appearance was a dark red color with a quickly dissipating white foamy head. No lacing.
The smell takes on tart granny Smith apples riding into a sour sticky caramel malt. Light dry nutty and grassiness comes together.
The flavor brings in the sour with the malt. So there’s a nice blend between the sour and the sweet. Light tartness. Semi-sweet to sour apple aftertaste leading into the finish.
On the palate, this one sat about a light to medium on the body with a nice sipping to sessionable feel to it. Sly carbonation. Slick saltiness making a good effort to stick to my tongue.
Overall, it’s one of those balanced maltier sour/wild ales. I don’t mind it. But yeah, hmm....maybe again.

The smell started off with a fresh green apple tartness beating upon fresh subtle vinous to bitter and sour lemon rind, light pulp. Flowing dry woodiness.
The flavor takes all of the previously mentioned flavors and combines dry and puckering sour with a semi-sweet underneath. Light grassy hops display a decent balance to it. Dry vinous/tart apple aftertaste and quick semi-sour to sweet finish.
On the palate, this one sat about a light to medium on the body with a nice sipping quality about it due to dry vinous qualities about it.
Overall, as an American Wild ale, it works and I could come back to this.

Can shared during the Sander Stag. Pours clear gold with a fine, foamy white head. Funky about, some melon, peach, tangerine, lemon. Lightly tart, moderately sweet, with notes of lime, tangy lemon, light pale wood, some gin notes. Light bodied with average carbonation. Fresh finish, fairly clean, with more lemony tartness, mild funk, juicy lime, tangerine. Great stuff.

brown, good clarity, acidity in the aroma with a little raspberry hints. very tart, lingering vinegar with chalk and sour. Raspberry is not pronounced. more watermelon and fig than raspberry. pretty thin.

hazy light orange yellow, no head. smell is sulphur. lots of lacto off-aromas. wheat with some candy flavors. tart with juicy orange. a little sulphur egg taste at the end. finishes tart with a light lemon.

Growler filled 3/18/16 and drunk 3/26/16, shared by blisscent.
Large white head immediately fades to a ring atop a moderately hazy, white-golden body.
Plentiful acids in the nose, with lots of odd funk. Very basement-like with moderate amounts of both acetic and lactic acids. Wine notes contribute very bright acid character, but perhaps too much intensity? Alcohol nor flaw apparent.
In the week this has been in the growler, it has fallen off a bit, developing a touch of butter even, while losing some of the tight carbonation that helped it out. Not sure why that is. Very cheesey-funky with lots of basement character and a slight metallic tinge. Rating is based on the draft sample I had on 3/18 at the brewery, though I don’t think the growler was all that bad, just hadn’t held up. Fair amount of wine and oakiness, with tons of funk, moderate sourness and no alcohol.

Bottle thanks to Blisscent. Color is a hazy gold, thin fast dying head. Aroma is Sweat, vinegar, bad body odor, funky yeast, bad funk.
Sweat mixed with vinegar and dirty socks. The flavor is SOOO bad. Fuck that is bad. The yeast is nasty. Drain pour, can’t do it. Still yet another awful American wild/ sour ale. I have to drink water, scrape my tongue and drink an IPA after this one.
