Light Pink, No head, lightly sour and fruity wild nose. Flavor as more complexity, cherries and red fruit notes, moderate acidity for a sour. Really tasty and rounded entry. Bring it on!

A: clear dark golden, big, frothy, white head.
A: vinegar, wet wood, blue cheese, fermenting apricot.
T: very sour apricot & nectarine, vinegar, leather.
F: tart vinegar, wet wood, grapes and sherry.
P: medium body, slick texture, average carbonation.
Intense and refreshing.

0.375 l bottle from 'Etre Gourmet', batch #5, bottled in April 2021. Very hazy, orangeish golden with a thin, frothy, slowly diminishing, white head. Slightly sweetish, quite sourish, gently fruity and a bit funky aroma of hay, lemon, rhubarb, some white grapes and a touch of oak. Slightly sweet, gently sour, rather fruity and slightly funky taste of lemon, rhubarb, oak, white grapes, gooseberry and some hay, followed by a short, slightly bitter, gently tart, moderately woody-dry finish. Medium body, gently astringent and moderately effervescent mouthfeel, soft carbonation. Nice brew, sad to see them disappear forever, one of the few Dutch sour and wild beer experts.

The second batch I've had. Perhaps it's the slight age, or just a better batch, but this is significantly better than No. 5. The grains are the star: local barley, wheat, rye, and spelt. Wild house culture: soft, gentle, complex, faintly tart.

Red grape, raisin, redcurrant, gingerbread, pink grapefruit, liqueur. Sweetish raisin & fig, sour grape, berries & nectarine; biscuity & jam-like maltiness. Earthy hops, bitter pink grapefruit, warming liqueur-like alcohol. Medium to full body, oily texture, soft carbonation. Blends all the aspects well, great!

Aus der Flasche (bottled 06.10.2022/bbe 06.10.2027) im 2025-07 getrunken. Dieses dunkle Ale kommt mit deutlichen Röstaromen und einer recht kräftig Citrus-Säure daher. Leider sind die Aromen total unstimmig. Wozu man hier ein BA mit eine Fino Sherry gemacht hat verstehe ich nicht. Denn so ein Fass bringt doch sehr feine Fruchtaromen, die hier keine Chance hätten hinter dieser Aromakombination sich bemerktbar zu machen. Das Ale geht leider in den Ausguß.
