Description
Shacksbury Cider makes dry, food friendly wild ciders in Vergennes, Vermont. We source over half of our apples from Sunrise Orchards in Vermont as well as old, abandoned orchards throughout the Champlain Valley. We also work with Dragon Orchard in England and Petritegi Sagardoa in Spain. Our fermentations are slow and deliberate. We rarely use added sulfites. We prefer native yeast / wild fermentations and bottle condition via methode ancestrale or methode champenoise whenever possible. At Shacksbury, we believe cider can, and should, be daring and complex. From gnarled trees on New England farmsteads to Old World orchards in England and Spain, our cider will change the way you think about this amazing fruit.

Can - Orange blossom and very perfumy. Clear orange gold. Orange and flowery with a ton of aromatics. Refreshing, but not really cider forward.

Bottle - Sweet champagne like apple and a honey like note. Clear gold with almost no head. Sweet, sour and acidic with a light nice funk. Solid.

Bottle. Pours with a clear yellow hued body with slightly more head retention than expected in a cider. Aromas are funky with strong phenolics, mild sulfur, strong fruit and floral notes. Flavors are lemony acidic, fruity, very light sulfur, funk, barnyard with firm tannins. Medium carbonation, lively acidity. Elegant.

500ml Bottle. Clear pale yellow hued body with a strong rush of carbonation as poured, but no retention/lace as per normal on a cider. First sniff is all carbonic bite, some funk (barnyard) and earthy notes beyond that, mild citrus. Flavors are phenolic forward (some bandaid and inflatable pool toys). Sort of Normandie-esque in that respect. Not offensive, but not flavors Iβve come to love. Mild citrus and almost strawberries. Very dry, massive amounts of carbonation. Medium to medium low tannin.

500ml bottle. Pours with a clear pale hued body. Carbonation is apparent, but does not leave much in the way of head, lace, legs, ect. Pretty standard cider appearance in other words. Aromas are bright, medium citrus (lemon, candied orange rind), light funk. Very mild VA and a hint of sulfur. Flavors are acidic, mildly funky (earthy, TCA, cheese), pretty dry but retains some fruitiness. Lightly leathery on the finish. Good tannin. Carbonation is medium low, with some viscosity to the body (for the ABV). Overall a pleasant, acidic cider.
