Description
We have been orchardists since the 1920s when we began to grow Roman Beauty apples on the farm. When we began specifically producing cidre apples in 2000, the entire orchard was transformed around that intent and slowly took shape. Surrounding the orchards, the larger farm produces a wide variety of fruits that diversify the land and aid in the pollination process, including peaches, pears, and hazelnuts.
Today, we grow a wide variety of heirloom cidre apples including French and English bittersweets, and American semi-sharps. In the Willamette Valley of Oregon where we farm, the ground is an ancient seabed full of rich and nutritious soil. With so much nutrition available to the trees, we have to suppress their vigor through pruning and selection to ensure that each apple receives the most intense nurturing for flavor and aromatics.

We grow our apples with specific cidre blends in mind. As you walk the grounds, it becomes clear that it’s organized around specific cultivation and harvesting techniques, enabling us to manage a precise maturation on the tree that we improve with every year’s lessons.

On tap at Hair of the Dog, pours a cloudy yellowish blonde with a tiny white head. Nose brings out farmhouse notes, crisp apples, and hay. Flavour is wonderfully funky, with lots of barnyard funk, hay, and crispy dry apples. Funky, rustic and complex, with a tiny bit of residual sweetness. Yeah, this is reminiscent of a true French farmhouse cider. Wonderful.

Thos is a good cider. Some sigar. Medium carbonation, yeast, a slightly acidic.

Bottle shared by JK, thanks! Pours a clear straw yellow with a thin white head that dissipates completely. Aroma has sweet apple with a bit of funk underlying. Flavor has dry and funky apple with a bit of sweetness underlying.

Aroma ia sweet but sirorisingly the flavor is. Ot at all. Ligjt apple, some yeast.

Bottle from BOTW. Nose is pear, apple, some mineral. Pale yellow with lace. Slightly cheese int the flavor, bit of farmyard funk, pear, nice sour edge. Good balance and quite tasty.

Bottle purchased last year from Whole Foods Bowery. Rounded pint glass pour. Pale straw, clear complexion, hinting at green. Fizzy, receding head. Smell is acidic, crisp, snappy, round. Light yeast. Slight perceived rounding sweetness of tart fruit. Taste is semi dry & delicious. Eating pear essence, apple cores, tannic core, drying skins that itch the back of your tongue just a little, light yeast; subtle farmhouse funk. Something faintly melon, something floral like faded lavender. Slight boozy end trail. Crispy, dusty, thin texture. Carbonic. Pretty easy to drink. Excellent. Not Granite, but pretty great.

500 ml bottle from BOTW. Possibly 1-2 years old, though I cannot confirm. Tannic, mineral nose, apples, some caramel. Deep orange-amber color, bubbly. Warm apple flavor, a bit of sweetness, minerals, some cheese, a bit funky, nice tannins. Light to medium light acidity, soft carbonation. A touch phenolic. Prickly, spicy, tannic finish. A lovely cider, probably the best and most traditional cider made in the US that I have tried to date.

500ml bottle from WFB. Rounded pint glass. Booming white wash head that quickly dissipates. Look is a just barely hazy pale wheat beer gold. Smells of really succulent sweet pears & cantaloupe. Yeast. Taste is yeasty, briney, acidic apples. No tartness aside from a nibble on the front of my tongue. Calcium. Booze. Saline. Still. Runny. Thin. It’s okay. Really needs just a dab of sweetness to bring in all those lush smells.
