500ml bottle. Pours a hazy whiteish colour with faint greenish hue and a thin, fizzy, short lived, white head that fully dissipates. Sweet aroma of mint leaf, lime and sugar. Sweet flavour of lime and honey with a minty aftertaste in a sweet finish. Light body with a syrupy texture and average carbonation. Refreshing but a little too sweet for me. Drinks more like a cocktail or cooler.

I’m not a big mead guy but I’m glad I got to try this, I’d never even heard of payment as a mead style... thanks TimE for the share. Fallen Timber Pyment Plum red-purple with a red wine like vinous aroma, the taste is waxy red grapes and sweetness. Red wine like but sweeter and to my mind nicer than most red wines. 3.6

Thanks TimE for sharing the bottle! Poured into a taster showing moderately translucent dark plum red. The nose shows intense notes of a lot of pronounced notes of black forest fruit - cherry, plum. The palate is full bodied and very tannic. Cabernet forward but a bit too much red fruit without the sweetness to balance out the mead. Drinks like an unbalanced wine.

Deep inky purple color. Sweet nose with lots of cab sav notes. The cab sav shines which is balanced by the mead with decent oakiness. Not crazy deep character but well balanced semi sweet. Straight forward but nice stuff.

Mint and lime. Grey. Sweet mint and lime with a long sweetish finish. More like a cooler.

Nice lemon and a touch of ginger. Like lemonade. Cloudy grey yellow with no head. Light sweetened lemon with a nice ginger bite in the finish.

500ml bottle. Pours a clear pale yellow with a thin, fizzy, short lived, white head that leaves spotty lacing. Sweet aroma of honey, white wine, lemon and floral hops. Sweet flavour of honey, apple, white wine, lemon and floral with a dry, hoppy, bitter grass finish. Light to medium body with a watery texture and lively carbonation.

Bottle thanks to Erin and Kurt! Pours a clear very pale yellow (hydrated pee) with a white head that dissipates to the edges. Aroma has notes of ginger and flora with a hint of dry honey underlying. Flavor is thin with dry honey and some ginger as well as a touch of flora.

Looks like “purple stuff” grape juice. alcohol legs on the glass. insane smell. like grapes, cherries, raspberries all mashed together with brandy added. Very dry, laves the mouth completely dry. loads of fruit. honey is a minimum and the grapes just shine! this is delicious.

Bottle - Nice fruity berry and vinous notes. Purple red. Dark grape and sweet honey. Sweet and solid.
