Description
CIB Brewery is a small batch, production-only nano brewery located in Carson, Iowa. We are a farmhouse style brewery. This means all of our beers are fermented using proprietary yeast blends including Brettanomyces, Lactobacillus, and other wild yeasts. The end result of this brewing process is that all of our ales will be somewhat sweet and tart on the palate and be uniquely flavorful. All of our wild yeasts are harvested and cultured in the brewery in Carson, IA.

750 mL bottle poured. My goodness. Thank you so much Prufrockstar! This might just be the most interesting brew I have tried within my favorite style. I feel like from this day forward, there will be pepper beers, and then there will be this one. Shared with Luttonm. Pours a burnt reddish brown color, active carb, moderate foam head. Aromatic from a distance, but not necessarily a big pepper there. Rather, it's more of a fruit and vegetable mix, with some odd sour indications. Flavor presents a little heat up front, and it grows as it leads to a long linger. The pepper is combined with what seems like a red cherry fruit along with it's sweetness. Sour flanders red/brown with cherries added, barrel aged with Trinidad Scorpion? Could that be it? Well damnit, they beat me to it!

750 mL bottle from John's Grocery. I need a beer for a "666" rating and this seems to fit the bill. I haven't even opened it yet but I assume it will be a gusher..... Shockingly no! Dark brown, large frothy tan head, good retention. Aroma of peppers,plastic, bandaids, coffee grounds, and maybe a bit of roast. Taste is vinegar, tart hell, ashy coffee notes, garbage, hot peppers. What fresh hell is this? Appropriate for 666.

Batch 4, Bottle 58. Mmm... 1%-ile for style. I see this is top notch stuff. Bottle from you know where. Dark brown pour. A very vigorous pour yielded a thin brown head that faded nearly instantly. Seems to be a common thread with this brewery. Aroma of tart cherry and soy. Taste is tart cherry, cherry pits, soy. Thin, slick, lingering tartness. This is underrated... definitely deserves 2nd percentile for style.

750 mL bottle sold at a discount at John’s Grocery. Dark brown, thin wispy head that quickly fades. Aroma of plum, cherry, chocolate. The taste is chocolate, caramel, tart cherry. Thin. There’s oak in this? Mmkay. Not as bad as some of the earlier ratings but definitely a mess.

Bottle thanks to Peeter. Pours a hazy pink with small off white head. The aroma is leather, wood, funk. Medium body tart, watermelon, leather, plastic, decent.

Bottle at RBWG GT. Pours a cloudy brown with medium beige head that lasts. The aroma is strong wood, pure sugar, bready malt. Medium body, grain, bread, boozy finish,ok.

750 mL bottle, shared in line at Zwanze. Pours hazy, reddish brown, with a medium beige head. The nose is over ripe strawberries, wet grass, bad yogurt, black bread, and caramel. Sweet and sugary, with a sour flavor that is borderline rancid. Medium body, a bit acidic, creamy, and sticky. This sour is unfortunate; off flavors dominate, and it clings to the palate.

Bottle shared by adnielsen at RBWG: Poured a burnt orange with tan head. Aroma was light medicinal fruit. Taste was pungent strawberry with tart vinegar.
