Description
We’re a small Belgian brewery on the grounds of a four-generation-old family restaurant in Damme. We brew classic Belgian styles with a twist, as well as international styles not common in Belgium.

In 2022, we decided to join forces with Hedonis Brewery and start a new brewing site in Michelbeke, in the heart of the Flemish Ardennes.

7/IV/17 - 75cl bottle from Bierhalle Deconinck (Vichte) @ my parents' place - BB: n/a, bottled: 14/XI/16 (2017-436)

Clear dark brown beer, creamy dark beige solid head, little stable, adhesive, leaving a nice lacing in the glass. Aroma: caramel, soft roast, sweet, dried fruits, some ripe banana, bit yeasty. MF: lively carbon, medium to full body. Taste: soft roast up front, bit sourish, caramel, sweet touch, alcohol, banana. Aftertaste: lots of alcohol, warming the throat, pretty roasted, pretty bitter, dry finish, some orange peel maybe, could be the power of suggestion though, more alcohol, too much present. Not getting any vanilla...

Bottle from De Hopduvel, Ghent. Hazy dark amber with a big and lasting off-white head. Aroma is sweet, malty, caramel and moderate hoppy - citrus. Flavor is quite sweet and rather bitter. Dry and moderate bitter finish. 020417

330 ml. bottle. Bottled 06.01.2017. Much love again for nothing the bottling date. Hazy golden, creamy white head. Nose is very soapy BE yeast, lemon esters, white pepper & chemical, dishwashing liquid fizzy BE. Very fizzy ester body. Taste is big esters, chemical soap, sugar, overly BE, soap, yellow paprika raw, bit green, green paprika bitter esters,... It is a very BE ester bright fizzy brew. Bit much for me, going over into soapy but it is apply made for me. It is very highly carbonated, very big on BE stuff.

330 ml. bottle. Bottled on 05/01/2017 (sweet they actually mention the bottled on date). Darker orange amber, off-white head. Nose is herbal almost medicinal orange peel hop, herbal pine, oily, quite herbal appearance of USA hops. Taste is medicinal herbal oil hops, quinine touch, very herbal pine, burlap sack,... Very oily, herbal dark bread malts in the back. Different from what you would expect given the style & hops but tasty and interesting beer. Nice stuff.

Bouteille 33cl, bottled 28/11/2016. Brune foncée frôlant le noir, col épais et crémeux café au lait. Arôme est fin malté, grillé, léger chocolaté, pointe de minéral venant des huitres avec un chocolat ressortant bien en rétro, l’accompagnement houblonné reste modéré. Palas est léger malté, pointe de chocolat, café et grillé. Petite touche minérale voire saline avec une ponctuation rappelant la réglisse. Houblonné versant sur le noble, finement citronné, sec et amer sur la fin. Ok avec encore un fini poussiéreux.

Bouteille 33cl, bottled 28/11/2016. Ambrée, col épais très dominant et une répétition des autres bouteilles toutes trop carbonnées. Le col est blanc-cassé. Arôme au nez fin tropical, rétro léger de jus de pin, malté cara pâle avec un petit résidu de levure poussé au dessus par cette activité trop important de l’effervescence. Plais est malté, finemetn grillé avec une touche de biscuité. Houblonné correct virant sur un léger tropical qui est plaisant et alterne sur les agrumes, en découle une certaine amertume. Malt pâle, cara et biscuité, levure reste encore une fois trop présente empêchant le caractère des houblons d’être plus marqué. Retrouve une petite note de pamplemousse et de pin.

Bouteille 33cl, bottled 17/10/2016. Dorée, col blanc épais très actif. Arôme au nez fin citronné, avec une touche de levure arrivant bien en rétro. N’offre pas le côte hennuyer de saison, retrouve un grains pils assez basique. Palais est de dominance sèche, très belge, houblonné noble virant sur un léger citornné et touche verte. Effervescence trop haute et qui enlève du caractère des houblons. Le tout reste monodimensionnel, centré sur les grains et un relent houblonné citronné.

Bab 2016. Thnx to Tderoeck and 77ships for sharing the beers ! Pours unclear blonde, small white head. Smell is bit yeasty, some citrus. Taste is sharp, citrussy. Some malts. Light mf, ok carbo.

Oyster and coffee stout (first time I encounter this combination), draught sample at BBF last week, rating from memory as I apparently forgot to take notes of this one - I’m getting old. Creamy, pale beige head over a black beer, toasted bread, coffee grounds, bitter chocolate, leather, some candied fig and cloves in the nose, sweetish, rounded flavor with dried fruits in the onset, supple and smooth mouthfeel, bit oily, nutty and toasted, bittersweet with black coffee impressions and spicy hop bitter touch in the end; I do not, however, remember any saltiness from oyster shells - but then, I had a Scheldebrouwerij Oesterstout last week in more ’contemplative’ circumstances and did not really pick out saltiness of any kind, seafood or not, from that one either. In any case a pleasant stout, this Cassandra, interesting enough for me to get out and purchase a new bottle for rerating in more detail.

Thank you for sharing kraddel + tderock + Rubin77! Sampled @ Bruges Beer Festival 2017. Hazy orange, off-white head. Nose is grass, green, raw barn, low vegetables, raw grains & other grains. Body is too fizzy, yeasty. Taste is fizzy, huge plaster, yeast, chalk notes, sugar, herbal & some less pleasant other grain notes. Not a fan of this one with the chalk, yeast & vegetable notes.
