Description
We’re a small Belgian brewery on the grounds of a four-generation-old family restaurant in Damme. We brew classic Belgian styles with a twist, as well as international styles not common in Belgium.

In 2022, we decided to join forces with Hedonis Brewery and start a new brewing site in Michelbeke, in the heart of the Flemish Ardennes.

F: not big, white, average retention. C: yellowish to gold, hazy. A: malt, sour, wheat, fruity, herbal. T: malt, orange peels, fruity, herbal, taste is better than the aroma, for me nothing very tasty, light body, medium carbonation, thanks to the BE RB crew for sharing beers today! Sampled @ Bruges beer festival 2017.

Clear pale yellow beer, big solid creamy white head, little stable, bit adhesive. Aroma: some sulphur first, later more sweet smells, malty, fruity notes. MF: ok carbon, medium body (impressive!). Taste: little bitter, grains, bit herbal, somewhat fruity, soft bitterness. Aftertaste: dry, some almonds, grassy, bitter finish, decent beer!

Bottle from Bierhalle Deconinck. The saison in this series of new Siphon beers, with very frothy, dense, foamy, egg-white head, remaining closed for most of the time and leaving a thick rim of papery lacing all around; clear and pure golden blonde robe with deeper ’old gold’ tinge. Aroma of isoamylacetate (banana-flavored bubblegum), white pepper, camomile, straw, powder sugar, sweetish cooked turnip, white bread crumbs, Granny Smith apple, raw rhubarb, green gooseberries, cheese spread or even young abbey cheese, butter, faint hints of vanilla, soap (probably the wheat), grass, pancakes, pineapple slices, whipped cream, dried wormwood and, alas, a whiff of DMS (the sulfuric smell of overcooked cabbage), something I am very sensitive to and have met all too often in - especially Belgian, I hate to admit - beers. Crisp, fruity onset, the expected banana ester of course mixed with fainter hints of sweetish melon and apricot on the one hand and sourish gooseberry and rhubarb on the other hand, highly attenuated with a sharp, very minerally carbonation effectuating further sourishness, light and coarsened, but still smooth mouthfeel, made slicker by the wheat, which identifies itself as a soft, lightly sourish ’soapiness’ in the middle along with cereal-like ’barleyness’. The banana ester continues on top of this and phenols gain a certain strength in the end, but remain subtly spicy and clove-like rather than turning medicinal or chemical. Dry finish, grainy and cereally, bit soapy, with a firm dosis of grassy, spicy and leafy hops, providing a quenching, drying, appetizing bitterness that lasts quite long over the remainders of that cereally malt sweetishness. Some phenols keep lingering in the background but elegantly so. Quenching, packed with flavor and in terms of pure flavor, not that far removed from some of Dupont’s standard ales, this is a saison ’pur sang’: dryish but still juicy, bright and foamy, crisp and rural at the same time. Siphon clearly understands what this style is all about, even though this is clearly a Saison Dupont epigone - with a tad too much of the old banana ester perhaps, but that is easily forgiven in a beer as technically correct as this one - apart from that DMS whiff, that is.

Pitch black beer, big fluffy creamy beige head, little stable, adhesive, leaving a nice lacing in the glass. Aroma: very roasted, dark chocolate, coffee, dry, very nice! MF: soft carbon, medium to full body. Taste: nice roast, slightly sweet, coffee, chocolate, little sourish, grassy, bitter. Aftertaste: very bitter and dry finish with a lot of roast, cocoa powder, very hoppy and bitter ending.

Little cloudy dark amber beer, creamy beige yellow head, pretty stable, adhesive, leaving a nice lacing in the glass. Aroma: lots of tropical fruit, passion fruit, grapefruit, pineapple, bit sweet, some caramel malts. MF: lively carbon, medium body. Taste: pretty bitter, citrus, grapefruit, very bitter, some pineapple. Aftertaste: sweet touch, malty, very bitter, dry, some tropical fruits. Well done, very nice and pleasant ipa!

Clear dark blond beer, huge creamy white head, pretty stable, adhesive, leaving a nice lacing in the glass. Aroma: dry, bit dusty, some citrus, almonds and cookie dough. MF: very lively carbon, medium to light body. Taste: little bitter, grassy, grains, bit sourish, some citrus. Aftertaste: dry finish, bit yeasty, very bitter, bit floral, pears, earthy, bit dirty.

At Kerstbierfestival 2016 , thnx for sharing everyone ! Pours nearly black, good white heas; Smell is bit roasty. Sweet. taste is sharp. Bit bitter. Coffee, very roasty. sharp, bitter maltyness. OK .

Pours black, good to big off-white head. Smell is rather intense, roasty, bit sweet almost. taste is intense, much bitterrness ( to my surprise) and not sweet at all, in contradiction to the sweet hints i had in the scent. truth be told, i never really seem to taste oysters in oyster stouts. perhaps, oyster shells dont have so much taste to bring to a beer , or it’s just that my pallet isn’t refined enough to taste it. Anyway, a random notice of mine - it seems rather poorly formulated ( I quote from the current description) ’’The shells are taken from the Siphon restaurant where the oysters have been freshly prepared and consumed by visitors earlier on brew day.’’ Basically, it sounds like a nice way to say ’we took the leftovers from the customers and brewed a beer with it’ . perhaps this could be changed in something... better ? I’m sure they didn’t want it to sound that way haha. the beer on itself is perfectly fine. All that needs to be there, is there. Whilst it’s def more on the bitter side, it’s still pretty balanced. Seems fit to pair with food as well. Well done, Siphon. best beer of all 44 i tried so far, and even though i prefer big, thick , intense stouts, this one is pretty alright as well !
