Description
We’re a small Belgian brewery on the grounds of a four-generation-old family restaurant in Damme. We brew classic Belgian styles with a twist, as well as international styles not common in Belgium.

In 2022, we decided to join forces with Hedonis Brewery and start a new brewing site in Michelbeke, in the heart of the Flemish Ardennes.

0,33 l bottle. Pours hazy amber with small, quickly dissipating off white head. Aroma of pine, fruity, sweet, yeast, solid malt base, some caramel. Taste is medium sweet and quite bitter. Body is quite full, carbonation lively. Finish is medium long, it packs a moderate bitter punch with more pleasant fruitiness. Good West coast IPA.

Deep black, opaque color and a nice tan head. Sweet liquorice nose,mineralic, umami. Nice liquorice, dark coffee, salty, sweetish. Nice bitter finish. Cool.

Hazy golden colour, white foam. Lively carbonation. A bit weak, citrussy, little bit banana, some tartness, a bit soapy. Ok, but I do like more the German interpretation of the style.

Weissbier by Siphon, launched in November last year; the name apparently refers to an old fortress nearby. Bottle at Huzaar. Dense and tiny-bubbled, membrane-lacing, egg-white, stable, wheat-enhanced head on a hazy golden beer with initially vaguely greenish tinge, later more beige-hued and hazy, with very lively sparkling remaining visible. Aroma of near-ripe banana, white bread, green apple, a hint of Cantaloupe melon probably related to the used Mandarina Bavaria hops, wet flour, chamomile tea, watermelon juice, unripe yuzu, raw sorrel leaf, hints of raw rhubarb peel, clove and soap. Sweetish onset, fruity but not wildly estery, hinting at green pear and green apple with a dash of banana thrown in; minerally carb, very active, but matching well with a smooth, eventually soapy mouthfeel; very wheaty core, slick and soapy, white-bready and dimly sourish, carrying ongoing accents of green fruit to a refreshing finish where a floral hop bitterness appears, linked with melon- and citrus-like accents from the modern hops that were used here. Bready and softly spicy aspects linger along, even a sweetish peach note that makes a late appearance. Slightly ‘different’ example of the style, not entirely conveying the traditions of Bavaria but all the more interesting for it, with a ‘postmodern hop infuse’ that manages to entertain in the background, even if the wheaty soapiness did begin to bother me a bit in the end.

A little cloudy orange blond beer, small creamy white head, pretty stable, non adhesive. Aroma: malty, ripe banana, grains, some bubble gum. MF: soft carbon, medium body. Taste: very malty, grains, pretty bitter, ripe banana, banana peel, pretty metallic touch. Aftertaste: slightly fruity, banana peel, a little bitter, malty, ok.

Goudkleurig bier met mooie schuimkraag. Smaak is bitterzoet en licht kruidig met iets van appel, wat honing en wat kruiden. OK.

Clear blond yellow beer, big creamy off-white head, pretty stable, bit adhesive, leaving a nice lacing in the glass. Aroma: very malty, 4VG, bit dirty, weird, yeasty, spicy, cloves, herbal touch, not much of the typical Hefe… MF: very lively carbon, medium to light body. Taste: slightly sweet, bit sourish, yeast, fruity touch, green apples, little sweet. Aftertaste: bit yeasty, some banana, gentle bitterness, malty notes, sourish, some wheat.

Clear orange beer, big creamy yellowish head, pretty stable, bit adhesive, leaving some lacing in the glass. Aroma: super fruity, lots of diacetyl, caramel, popcorn, sweet malts, dank hops. MF: ok carbon, medium to full body. Taste: sweet start, malty, diacetyl, pretty bitter, some caramel malts. Aftertaste: malty, grains, sweet caramel malts, dank, nice bitterness, but also buttery, diacetyl, meh. The hops can mask it a bit, but not that much.
