Grimross Brewing Co. seeks to craft wonderfully tasty Maritime beers. Although we don't intend to produce a single "style" of beer, owner and head brewer Stephen Dixon is inspired by the brewers of Belgium and Northern France.

Belgian brewers have produced a wide array of tastes and are renowned for their irreverent approach to brewing. Belgian brewers were some of the first to explore using different ingredients such as spices and fruit and explore different approaches to fermentation. In particular, Stephen is interested in the effect of different yeast strains. Most commercial brewers use one or more of the yeast strains of Saccharomyces. Grimross will explore the wild and wonderful array of organisms that can produce beer, including Saccharomyces, but also a "wild" yeast called Brettanomyces and the bacteria Lactobacillus and Pediococcus. By using these various organisms in different ratios and at different stages in fermentation, Grimross seeks to produce a variety of new beers, including sour and funky tastes and aromas.

Can. Golden colour, just a slight haze. Estery nose, pears, a bit sticky. It's about that on the palate, too. Leaning towards sweetness before a touch of apple and acidity comes in at the end. The esters are just below the point where I'm getting annoyed. Low bitterness.

Can. Very dark brown colour, and a fairly big head. The aroma has toasted malts and some dark sugars. Medium body, flavour leads with dark sugars, but the toasty notes come in towards the finish. So it has a couple of nice elements that work well together. Maybe lacks the richness of the better European ones, but it's definitely a solid dark lager.

Can. The aroma seems sort of fudgey, maybe toasty. It's a fairly boozy little number. Big malts, too, leaning towards molasses, with a balancing bitterness. Definitely that toffee/molasses thing has me thinking doppelbock more than anything else. Doesn't offer the sort of big rounded sugars or complex flavours that might make it sing, however.

Bright dark amber body with a thick head - enticing. On the nose, sweeter caramel malts, but with hints of toastiness and toffee. On the palate, enjoyable, light toast, touch of caramel. Just enough hop bitterness. Well balanced, complex marzen.

Clear gold with a rich white head. Orange, spice and booze. Booze, orange and sweet sticky with spice.

Jet black with a rich light brown head. Pine and roast. Light pine, nice roast and a softer finish than expected. Well balanced and not as bold as some, making it quite easy drinking. Solid.

(473ml can c/o my girlfriend, source unknown to me) Pours basically clear bright gold with an average white head. Notes of lemon, a bit of tart stone fruit, light esters, lots of cereals and fresh baked bread, some sulphur like in some pils, some phenols/herbs/dried flowers/white pepper axis notes through the sip into the finish. Light body with a slick texture and soft filling carbonation. Alright stuff with food, feels like a Belgian blonde as much as a saison but drinkable.
