Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Pinky-amber colour, small steady white head. Sweet even a bit sugary fruity aroma. Light-bodied. Sweetish, fruity, not maybe blood orange, more like orange and berries in the flavour. Nah.

Keg at BD Waverly. It pours hazy pink with a small bubbly white head. The aroma is soft, sweet - sour, fresh strawberry character dominates, raspberry, jammy, touch of natural yoghurt and strawberry cheesecake. The taste is smooth, tart, puckering, tangy, sweet - sour character, quite juicy, fresh strawberry character, natural yoghurt, strawberry cheesecake cake, some sherbet/fizzy sour candy, granny smith apple and some bircher muesli. Average body and soft, supportive carbonation. Super easy going. Works pretty well before 10am on a Wednesday.

Toblerone, baby! Aromas of chocolate, honey, nuts and some raisins. The raisin notes are not quite on brand, but I love them! There's some light citrus in the mouth, but it doesn't overwhelm the flavours. Just amazing.

Can at home. Pours deep purple, nose is rhubarb, blackcurrant, menthol, taste is a bit of berry then overwhelming mint. Like drinking halls soothers/lockets. Not quite working for me. 8/6/5/5/5

Cloudy yellow with a short snow white head. Aroma of salty citrus. Flavour is lemon juice, tropical, white wine base, tangy salty finish.

Hazy red pour with a firm white head. Aroma is (artificia) sweet cherries. Tast is cherries, cola, a tiny hint of vanilla. It is not bad, but I wonder if you could have created the same effect with fruit rather than fruit concentrate.
