Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Thanks Alex Maier! Murky red colour, small pinkish head. Aroma is cherries, not actually that far from Dr. Pepper. Flavour is cherries, some sugary tones, and well, rather Dr. Peppery.

Can from Havnens Vin og Tobakhus. Pours opaque black with small brown head. Aroma is intense roasted hazelnuts, walnuts, macadamia, coffee, cocoa, roasted coconut, toffee, syrup, roasted malt, and hints of raspberry. Taste is very sweet, light to medium bitter, light acidic, and light salty. Body is creamy with soft carbonation. Finish is long and mostly sweet with intense notes of roasted nuts, toffee, coffee, milk, cream, vanilla, cocoa, and hints of door sour raspberry. Very rich and intense, yet in excellent balance.

Can 44 cl. Pours a cloudy, opaque reddish orange with alacing, off-white head. Definitely lychee in the nose with some subtle, underlying notes of rose water. Light body - thinnish even - subtle lactic tartness. Flavor wise things have swopped around with the rose water now dominant, lychee playing second fiddle and the pear pretty much absent. But a super refreshing 'lemonade' - perfect for summer.

Sample on tap at Mandag i Annen, Cardinal, Stavanger. "Off-golden" to orange colour, moderate to small white head. Aroma and fairly fresh flavour of strawberries, vanilla, lactose and lactic acid.

Can from Sainsburys. Nose is catering chocolate, banana, lightly fruity. Taste is fruity, leading to catering chocolate, banana foams, banana, milk chocolate, with a hint of dark malt. Faint ash note in the finish.

It does a bit like mini eggs, but tastes more predominantly of a very bad beer. It's cloying with the sickly banana taste very unpleasant.

Abysmal.

On tap at Cardinal, Stavanger. Pours hazy orange-amber with little head. Generic aroma of fruits and vanilla. Tastes slightly sour with quite some sweetness. Thin bodied, sour finish.

Sesongstart på Mi2 Cardinal, hvor vi alle stilte med topptrimmet lever og tilsvarende pågangsmot. Først ut er denne fatølen: uklar rødgylden med fint skum som varer. Noe kunstig aroma og smak av jordbær, vanilje, lactose og bruspulver. Fort unnagjort.
