Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Cloudy orange beer, dense creamy yellowish head, stable, adhesive, leaving a nice lacing in the glass. Aroma: lots of lactobacillus, fruity, juicy, passion fruits, more passion fruit, ripe mango, guava. MF: ok carbon, medium body. Taste: ripe to overripe tropical fruits, nice acidity, very juicy, like multi-vitamin tropical fruit juice, some lemon juice. Aftertaste: pretty acidic, little bitter, very fruity, some tannins, passion fruits, some bitter mango.

Bottle at home. Pours deep ruby, nose is almond, vanilla, cherry, caramel, biscuit, taste is juicy cherry, sweet, tart, almond, biscuit, light funk.

Bottle at home. Pours orange, nose is huge ginger, rhubarb, funk, fiery ginger, juicy, rhubarb, dry finish.

Bottle shared at Colin's high Wycombe tasting. A milky purple colour pour witha loose pink head. Aroma is jammy berries. Blackcurrant, sugary, red berries, milky. Flavour is composed of medium sweet, tart, mixed red berries, blackcurrant, berries, milky dough. Palate is medium sweet, tart, lowish carbonation.

Bottle thanks to Tipple. A hazed reddish brown coloured pour with halo of halo of beige head. Aroma is medium sweet, tart, big cherry, vanilla, cola cubes, brown sugars. Flavour is composed of semi sweet, light tart, woody cherry, cola cubes, tangy,. Palate is semi sweet, tart, fine carbonation.

375ml Bottle sophiesbeerstore.co.uk. Misty golden orange appearance, nice frothy white head. Oodles of rhubarb in the aroma, soft ginger. Impressive rhubarb presence overall, complemented nicely by fresh zingy ginger, perhaps a little lemongrass creeping in. Great clarity of flavour with a nice sharp edge. Very good.
