Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Keg at Heidrun, HW, 18/01/20. Murky orange with a decent off white cap. Nose is tangy apricot, grass, sharp citric zest, light piss, damp cloth. Taste comprises apricot yoghurt, lemon rind, damp wood, modest funk, acidic rise, grains, hay bale. Medium bodied, fine carbonation, semi drying close with a puckering bite. Ok sour.

375ml bottle. Hazy orange with a small head fading quickly. Aroma of orange juice and zest. Taste is all blood orange juice, zesty and slightly tart, a touch of lactose. Medium body, only a small amount of carbonation, almost flat.

Bottle from Park Fever, Hither Green. Hazy orange pour with a white head. Apricot jam, orange and lemon marmalade nose. Orange peel, apricot jam, tart and sweet juicy fruit flavours.Very pleasant indeed.

[33cl bottle from Beer52.] A straw coloured pour with a billowing white head; sour grainy aroma with some yeast in the background; sharp and sour in the mouth with grapefruit and tropical fruit; and a sour finish. Unrelenting in its sourness. Not for me.

375ml bottle. Hazy, orangey golden colour with small to average, frothy, osteoporosing, minimally lacing, white head. Sweet-ish, wheaty and citrusy fruity as well as lactic, tart-ish aroma, notes of blood orange, grapefruit, grapefruit zest, hints of sauerkraut. Taste is sour, citrusy fruity, slightly lacitc, minimally sugary sweet and sweet-ish wheaty malty, notes of blood orange, grapefruit, grapefruit zest, a touch of sauerkraut. Not too sour, nice sweet-ish, though sadly minimally sugary counterpart. Very refreshing - nice.

Bottle at home. Pours hazy orange, nose is mango, peach, funk, taste is similar, juicy, sweet, grapefruit.

keg at the hanging bat... Light amber.. Light dry peach orange fruit nose... soft dry sherbet orange fruit nose.. Light dry sharp citrus fruit.. big juicy mandarin fruit
