Description
Pilot was born when Matt Johnson and Patrick Jones met while studying for masters degrees in Brewing & Distilling at Heriot-Watt University in 2012. A shared view that there was something different to be done in brewing – not traditional real ales, but not just another U.S. craft beer clone either – led to home-brewing together, which eventually led to buying a second-hand brewhouse and moving to the heart of cosmopolitan Leith, commencing brewing right at the end of 2013.
We’ve never done things the easy way. We dismantled the plant ourselves. We moved it to Leith and rebuilt it ourselves. We dug out the drainage (pro-tip: pay real men to do that), installed the flues and built the cooling system ourselves. We design, brew and drink the beer ourselves. We are Pilot.

330ml can. Murky dark amber, two finger beige head which leaves a nice creamy top. Funky earth-vegetation and sweet malt aroma; not the most inviting. Taste is sweet malts, caramel, earthy green hops, almost savoury in note, some jammy fruit elements in the finish. It tastes much better than it smells. Moderate body. Mixed.

Dark amber beer, thick head. Loads of malt in the aroma and flavour, caramel, hops, some rye-ish flavour. Nicely balanced, super drinkable.

Can from The Beerhive. Murky deep Golden body with an off-white head. Lively carbonation. Faint lacing. Aroma of cooked orange and boiled sweets. Flavour of papery malt, berries and orange. Medium body with a slick texture. Light fizz. I wanted to love this but it’s just ok - it’s quite astringent. I prefer Pilot’s darker beers.

Can from Against The Grain. Hazy ruby/brown body with a thick beige head that holds well. Steady carbonation. Faint lacing. Aroma of toffee and earth. Flavour of rust and pine. Medium body with a smooth texture. Soft fizz. Malty and nicely hoppy.

Can from Appellation Wines. Appearance - deep brown and lightly cloudy. Beige head. Nose - hazelnut, brown bread and dry toffee. Taste - light hazelnut, dry bread and richer toffee this time. Palate - close to medium bodied, roasty finish. Overall - pretty good.

Can from Appellation Wines. Appearance - murky orange and an off-white head. Nose - dried apricots, sweet melon and mango. Perfumed, overripe tropical fruit, like an Asian grocery shop. Taste - more sweet melon, peach and light mango, dry fruit skin finish. Palate - light to medium bodied, ripe middle and dry finish. Overall - good.

Can from Appellation Wines. Appearance - cloudy to murky yellow with an off-white head. Nose - orange zest, herbs and light biscuit. Taste - more herbs up front, then orange and orange zest. Some breadiness underlying. Palate - light bodied, dry zesty finish. Overall - good.
