Description
Pilot was born when Matt Johnson and Patrick Jones met while studying for masters degrees in Brewing & Distilling at Heriot-Watt University in 2012. A shared view that there was something different to be done in brewing – not traditional real ales, but not just another U.S. craft beer clone either – led to home-brewing together, which eventually led to buying a second-hand brewhouse and moving to the heart of cosmopolitan Leith, commencing brewing right at the end of 2013.

We’ve never done things the easy way. We dismantled the plant ourselves. We moved it to Leith and rebuilt it ourselves. We dug out the drainage (pro-tip: pay real men to do that), installed the flues and built the cooling system ourselves. We design, brew and drink the beer ourselves. We are Pilot.

Cask at the hanging bat. Pours pale golden amber, nose is sweet toffee, floral, taste is juicy pine, sweet, floral.

Cask at the bow, back to the future event. Pours dark brown with a thin tan head. Aromas of chocolate, light bourbon and vanilla. Taste is light roast, light sweet. Thin finish.

Cask at the bow bar. Pours black, nose is coconut, bourbon, chocolate, toffee, taste is similar, sweet, oak, little thin.

Tried at the Nottingham beer festival 2015. Dark almost black colour with a thin head. Aroma toasted malt coffee and chocolate. Taste also coffee and chocolate.

Cask (gravity) @ Nottingham Robin Hood Beer Festival (2014), Nottingham Castle, Nottingham, Nottinghamshire, England NG1 6EL. [ As Pilot Beer Indian Pale Ale ].Unclear medium orange color with a average, frothy, good lacing, mostly diminishing, off-white to white head. Aroma is moderate malty, caramel, moderate hoppy, orange - citrus, celery, fruity. Flavor is moderate sweet and bitter with a average to long duration, fruity, orange, caramel, celery notes. Body is medium, texture is oily to watery, carbonation is soft to flat. [20141009]

Keg at V Deep. Hazy orange body with a thin white head. Lively carbonation. Faint lacing. Aroma of Sprite, coconut and rubbed basil. Flavour of herbs, lime zest, passionfruit and a spicy finish. Thin body with a spritzy mouthfeel. Light fizz. Quite peppery, but a tasty Saison. Another winner from Pilot.

Keg at the hanging bat... Massive soft basil .. Zezty orange fruits nose... Juicy zezty citrus fruits.. Juicy toffee.. Light soft basil... Nice but too fizzy... All told this is quite nice but these guys are idiots and this is a summer beer, so no idea why its on sale now.

Keg at the Hanging Bat. Pours hazy gold with a thin white head. Aromas of basil, lemon. Taste is more on the lemon peel side, more basil at the back. Interesting.
