Description
Pilot was born when Matt Johnson and Patrick Jones met while studying for masters degrees in Brewing & Distilling at Heriot-Watt University in 2012. A shared view that there was something different to be done in brewing – not traditional real ales, but not just another U.S. craft beer clone either – led to home-brewing together, which eventually led to buying a second-hand brewhouse and moving to the heart of cosmopolitan Leith, commencing brewing right at the end of 2013.
We’ve never done things the easy way. We dismantled the plant ourselves. We moved it to Leith and rebuilt it ourselves. We dug out the drainage (pro-tip: pay real men to do that), installed the flues and built the cooling system ourselves. We design, brew and drink the beer ourselves. We are Pilot.

Keg at brewdog Edinburgh. Pours deep orange amber, nose is sweet toffee, floral, taste is dry, toffee, juicy fruit, floral.

Bottle. Very hazy gold beer, thin pale cream colour head. Palate is light and crispy. Pure Parma Violets on the snout, makes me grin! Very light malts. Parma Violets - loud and clear but clean and light and never sticky or cloying. A little citric hop provides contrast and there a mild floralness underpins. Light crisp finish with a violet floral linger. Very nicely done and great fun. Whilst I can see this was a total bitch to make, can I request a ’Refreshers’ version next?

Clear amber beer with a decent head. Light grapefruit aroma. Taste is grapefruit too but there’s a subtle maltiness undercutting it to balance it out. Not especially memorable but very drinkable.

Cask at Cask & Barrel. Hazy golden body with a thin off-white head. Nice lacing. Aroma of passionfruit, juicy orange and pine. Flavour of creamy malt, lemon and mandarin. Medium body with a smooth mouthfeel. Faint carbonation prickle. Delicious and very drinkable.

Cask (handpump) @ GBBF 2014, Great British Beer Festival, London Olympia, Hammersmith Road, London, England W14 8UX. [ As Pilot Beer Blønd ].Unclear - hazy matt medium yellow color with a small, fizzy, fair lacing, fully diminishing, white to off-white head. Aroma is light moderate malty, pale malt, moderate to light light heavy hoppy, grass, fruity hops. Flavor is moderate sweet and bitter with a long duration, fruity hops, pale malt, hoppy, citrus. Body is medium, texture is oily to watery, carbonation is soft to flat. [20140812]

MF: quite some carbon, medium to full body. Taste: sweet, lots of overripe banana, sugary, coffee, mocha, caramel, very sweet. Aftertaste: pretty hoppy, bitter, cocoa powder, mcha, caramle, lots of alcohol, spicy touch, herbal.
