Description
Pilot was born when Matt Johnson and Patrick Jones met while studying for masters degrees in Brewing & Distilling at Heriot-Watt University in 2012. A shared view that there was something different to be done in brewing – not traditional real ales, but not just another U.S. craft beer clone either – led to home-brewing together, which eventually led to buying a second-hand brewhouse and moving to the heart of cosmopolitan Leith, commencing brewing right at the end of 2013.

We’ve never done things the easy way. We dismantled the plant ourselves. We moved it to Leith and rebuilt it ourselves. We dug out the drainage (pro-tip: pay real men to do that), installed the flues and built the cooling system ourselves. We design, brew and drink the beer ourselves. We are Pilot.

On tap at Fyne Fest’, Achadunan, Cairndow, Argyll and Bute, Scotland, Friday and Saturday 12th & 13th June 2015 Amber in colour with a sticky white head, hazy appearance.I can get some tea, not sure about the lemongrass but it’s very nice, refreshing and tasty stuff. A6 A3 T7 P4 Ov14 3.4

Bottle sample at a tasting at Max’s place. Thanks Ariel. Hazy deep golden. Aroma of fruity hops, slightly stale. Flavor has some sweetish malt, slightly stale hops, and lingering bitterness. Medium-bodied. A bit heavy and alcoholic.

Bottle thanks to allmyvinyl. Appearance - opaque black with a lovely fawn head. Nose - very dark chocolate and coffee. Taste - toffee, dark chocolate and honeycomb. Some sort of dark chocolate and coffee Crunchie Bar. Palate - medium bodied with a creamy texture and a long dry and balanced finish. Overall - very enjoyable and indulgent.

Keg at Bow Bar. It pours cloudy deep mahogany brown with a small beige head. The nose is sweet, juicy, fudge, toffee, Scottish tablet, vanilla shortbread, lemon curd and fruit cake. The taste is bitter-sweet, big toffee action, vanilla extract, earthy, toast, dark fruits, raisin, fruit cake, biscuit, fudge, lemon parfait and white sugar with a dry, lightly warming finish. True to its word. A bit sweet for me, but good fun anyhow!

Keg at the bow bar. Pours hazy red-pink with a thin pale pink head. Aromas of blueberries, light wheat and banana notes. Taste is sweet blueberry. Clean finish.

Bottle at Chriso easter tasting. 04/04/2015. Thanks to Craig. Viscous dark brown coloured pour with a frothy cream head. Aroma is green pepper, coffee bean, hot alcohol. Flavour is composed of full nutty, milky coffee, coffee bean, veg, sticky. Palate is medium full, semi sticky sweet, moderate to high carbonation. Lingering milky coffee, hot alcohol.

Gravity dispense at Craft 100 ,CBC Clapham, 02/04/15. Black with a decent tan covering. Nose is coffee grinds, light spice, biscuit, charr, toffee, chcolate. Taste comprises cocoa powder, coffee, hint of vanilla, dark malts, toffee fudge. Medium bodied, fine carbonation, drying close. Decent stout.
