Description
Pilot was born when Matt Johnson and Patrick Jones met while studying for masters degrees in Brewing & Distilling at Heriot-Watt University in 2012. A shared view that there was something different to be done in brewing – not traditional real ales, but not just another U.S. craft beer clone either – led to home-brewing together, which eventually led to buying a second-hand brewhouse and moving to the heart of cosmopolitan Leith, commencing brewing right at the end of 2013.
We’ve never done things the easy way. We dismantled the plant ourselves. We moved it to Leith and rebuilt it ourselves. We dug out the drainage (pro-tip: pay real men to do that), installed the flues and built the cooling system ourselves. We design, brew and drink the beer ourselves. We are Pilot.

Cask @ GBBF 2014. Pours a hazy golden color with a small white head. Has a fruity peachy hoppy aroma. Fruity peachy hoppy flavor. Has a fruity malty peachy hoppy finish.

Keg @ Old Gate, Hebden Bridge. Cloudy amber with a very thin head. Has a dry spiciness, most evident in its lingering and dry aftertaste. Is slightly sour with tropical fruits in both aroma and taste.

Cask at Cloisters, as Ultra Violet. Pours clear golden, nose is wheaty, huge parma violet, taste is dry, chalky, juicy, sweet, parma violet.

8.5abv keg at the vintage... Murky as hell... Amber orange... Thin white lacing... Soft sweet floral fruit.. Light pine and passion fruit nose.. Soft sweet juicy fruits front.. Very tropical... Light bitter herbal fruit linger

Keg at the 9a... Murky hazy pink amber., thin off white lacing... Soft sweet floral hop.. Hints of apple nose... Light fizz.. Ok ok ok.. This is Wierd... Initial hit is of crumble, not fruits but the crumble... Yeah just tried it again and theres no getting aeay from crumble... However on swallow the taste totally changes first apple then blackberry then a long dry tanin apple linger.. Wierd... Drinking wise its ok. Decent but wierd... But gor a unique beer its right out there. Never had anything like it

Cask at cloisters(tropical Blonde. (it was wort from a big brew siphoned off and fermented with a bunch of tropical fruit whacked in.)... Big hazy yellow amber... Thin white lacing... Soft zezty peach... Pineapple fruits... Very soft very juicy... Very fruity... Crackin... Light peppery fruits
