Description
Pilot was born when Matt Johnson and Patrick Jones met while studying for masters degrees in Brewing & Distilling at Heriot-Watt University in 2012. A shared view that there was something different to be done in brewing – not traditional real ales, but not just another U.S. craft beer clone either – led to home-brewing together, which eventually led to buying a second-hand brewhouse and moving to the heart of cosmopolitan Leith, commencing brewing right at the end of 2013.
We’ve never done things the easy way. We dismantled the plant ourselves. We moved it to Leith and rebuilt it ourselves. We dug out the drainage (pro-tip: pay real men to do that), installed the flues and built the cooling system ourselves. We design, brew and drink the beer ourselves. We are Pilot.

Keg at Cloisters. It pours cloudy gold with a decent white head. The nose is sweet, fizzy Parma Violets!!!, sherbet, floral, apricot and candy. The taste is crisp, bitter, citrus peel, parma violets, sherbet, doughy, popping candy, straw, peach and apricot with a dry finish. Medium body and fine carbonation. With 100 packets of Parma Violets in this one singke keg I expecting much higher sweetness, but thankfully not! Crisp, fruity and delicious. Very nice indeed, without being sickly.

Cask handpull at 2014 GBBF. Very cloudy murky orange with a lasting loose white head. Aroma is fresh flowery citrus, american hop. Flavour is grainy doughy malts, semi crisp, fresh citrus clean hop profile. With a touch of tropical fruit. Palate is medium bodied, doughy and grainy. Nice carbonation. I like the beer, needs a bit more finings.

Cask at the Vintage, Leith. It pours clear golden amber with a medium white head. The nose is brown bread, wood, mild spice, leather and florals. The taste is crisp, doughy, floral, spice, breadth malt and light stone fruits with a dry finish. Medium body and fine carbonation. Not a whole lot to it...

Cask at Great British Beer Festival 2014, Olympia, London. A hazy amber/golden coloured pour with a medium white head on top. Hoppy, malty, tropical fruit, tangerine aroma. Tastes hoppy, malty, tropical fruit, tangerine, smooth and easy drinking. Really enjoyed this one.

Cask at the Hanging Bat. It pours cloudy orange-amber with a nice off-white head. The nose is juicy tropical fruits, passion fruit, mango, sweet dough, candied peel and mild spice. The taste is bitter-sweet, orange, peppery grapefruit, toasted sugars, oily hops and pine with bitter, woody finish. Medium body and fine carbonation. Works surprisingly well on cask. Bitter, fruity and balanced. Another winner from Pilot.

Cask at GBBF 2014. It pours cloudy dirty blond with a thick white head. The nose is soft orange, tangerine, mango, brioche, bergamot and dough. The taste is dry, bitter, citric, orange peel, grapefruit, spice, bergamot, earthy, doughy, with a dry, citric finish. Medium body and moderate carbonation. Soft, smooth and pleasant bitterness. Very nice indeed.

Cask at Guildford Arms. It pours darkest brown with a decent light tan head. The nose is rich roast, coffee, dark chocolate, creaminess, rubber tire and earth. The taste is bitter, roasty, dark cocoa, creamy, milk chocolate, coffee, toast, mild astringency with a lingering roasty finish. Medium body and fine carbonation. Well executed and rather tasty.

The taste is bitter, orange peel, grapefruit, lemin pithy, floral, resin and good hit of ginger with a lingering dry, bitter finish. Medium body and soft carbonation. Interesting and works well.
