Description
Pilot was born when Matt Johnson and Patrick Jones met while studying for masters degrees in Brewing & Distilling at Heriot-Watt University in 2012. A shared view that there was something different to be done in brewing – not traditional real ales, but not just another U.S. craft beer clone either – led to home-brewing together, which eventually led to buying a second-hand brewhouse and moving to the heart of cosmopolitan Leith, commencing brewing right at the end of 2013.
We’ve never done things the easy way. We dismantled the plant ourselves. We moved it to Leith and rebuilt it ourselves. We dug out the drainage (pro-tip: pay real men to do that), installed the flues and built the cooling system ourselves. We design, brew and drink the beer ourselves. We are Pilot.

Keg at the Stockbridge tap...big pink red... Thin white lacing... Soft floral fruit.. Herbal fruit nose... Way to cold and even morr way to fizzy... Tart fruits... Light hibiscus edge... Ok

Keg at The Hanging Bat. Pours pale red, thin pink head. Light spice aroma, citrus, floral, red fruit. Taste is light spice, more citrus. Other flavours kinds if overwhelm the saison character, but the dryness works well overall. Good stuff.

On cask @ Cloisters. Appearance - golden with a slight haze and a generous creamy head. It also looks quite oily. Nose - pineapple and grapefruit with a resin thing too. Taste - more bitter than the nose, grapefruit takes over. Also into pith territory. Palate - close to medium bodied with a big creamy texture and a long dry finish. Overall - good ale.

Keg at The Stockbridge Tap. Hazy pink(!) body with a thin white head that quickly fades. No lacing. Aroma of orange sherbet, Refreshers and rubbed rose petals. Flavour of tart berries, rhubarb, tangy lemon and rosé wine. Hides the alcohol well. Thin body with a watery texture. Light fizz. A unique Saison, but lacking in body.

Tap East Collaboration Fest. Cask. Cloudy amber beer, good pale cream colour head. Palate is light and semi dry. Mild fine carbonation. Nice tangy lemon - pleasantly sharp. Little citric peel underneath. Dry, almost dusty malts underneath. Light dry finish. Hop spice linger. Pretty drinkable.

4% cask at the Bridge, Ratho. Pours hazy orange-gold. Thin white head. Citrus, grapefruit and pineapple aromas. Taste is bitter. Rich, oily mouthfeel. Nice.

Cask at Cloisters. Pours dark brown, definitely get the burdock on the nose, roast malts, taste is sweet, dry, herbal, light roast. It is almost like drinking the juice.
