Description
The reason Jamie Emmerson and Irene Firmat started Full Sail in the first place was to build a company that was completely different from the ones where we’d previously worked. It wasn’t about business as usual. It was about finding our calling in life — about truly appreciating our “human resources,” and balancing work, life, family and friends in a way that makes life truly worth living.
Determined to make world-class beer in our own backyard, one of our first, and perhaps best, decisions was to invest in new, state-of-the-art brewing equipment. So we bit the bullet, laid down our borrowed cash, and spent the better part of 1987 installing the new system. Our love for the environment is what drives our sustainable practices, so pure water, local ingredients and responsible processes are poured into each and every tasty pint.

On tap at Full Sail, pours a clear dark amber with a tiny white head. Aroma reveals a nice red wine barrel character, replete with a nice woodiness, tannins, dark fruits, and toffee. Flavour is rather complex and integrated, with lots of red wine, tannins, oak, toffee, and some red fruits. Complex, cohesive; nice use of the red wine barrels. Very good.

On tap at Full Sail, pours a clear blonde with a small white head. Aroma reveals grassy hops, some pine, some herbaceous qualities, and soft bready malt. Flavour is bright and clean, with a nice bright, piney hoppy bitterness, some grapefruit, grass, and crisp biscuity malt. Good balance, clean, and vibrant. Solid.

On tap at Full Sail, pours a clear dark amber with a small white head. Aroma has dry bready malt, a touch of caramel, and some red berries. Flavour is very malty and yet not too sweet, with big bready malt, toasted caramel, and a dry, slightly metallic finish. Good malty base to this, maintaining drinkability by not being too sweet. Good stuff.

On tap at Full Sail, pours a clear golden with a small white head. Aroma is pure diacetyl, with not much redeeming hoppy character beneath. Flavour is an absolute abomination: nothing but nasty diacetyl clobbering the taste buds. 39 years and I get diacetyl in my second beer of the flight. Fuck off.

Flavour has a great juiciness embedded within the bitter piney hops and grapefruit peel. Finished bitter, juicy and well-balanced. Very good.

Flavour comes across better, with lots of bitter grapefruit peel, gentle floral notes, piney hops, and bready malt. A bit obscured hop expression but comes together decently. Pleasant.
