Description
Tillingham is set amongst 70 acres of rolling hills and woodlands with far reaching views along the Tillingham River valley and across to the fortified, hill top town of Rye, East Sussex, to the sea and the Romney salt marshes beyond.

This mixed farm, which dates from the 13th century, is home to vineyards, fruit trees, ancient woodland and livestock. The recently renovated farmstead provides a place for visitors to stay and enjoy the produce of the farm and the local area.

Our philosophy at Tillingham would be best summarised as progressive: incorporating what we know of the best scientific and technological knowledge available to us, whilst championing ancient traditions and best practice learnt from millennia of farming and winemaking.

750ml bottle from Fine Cider Co. Pours a cloudy orange colour, short-lived fizzy white foam head and aroma of juicy apple, fruity, peach hint, alittle funk. Taste is tangy, tart, apple, fruity, stone fruit, citric, with alittle woody funk and drying bittersweet tannins. Medium bodied, fine carbonatiom, drying tannic finish. Nicely drinkable, .

Bottle. Beer Stop, Dronfield. Mostly clear, blush pink. Ring of dense, white head. Nose has crisp, sweet dessert apple. Grape skin. Some unripe berry fruit. Touch of pepper, according to the missus. But then she also said strawberry mousse? Taste is fairly sweet, with a light apple skin tartness. Light to medium body. Fine, foamy carbonation. Touch of acidity. Decent balance of sweet and tart apple on the finish. Elegant.

Bottle. Beer Stop, Dronfield. Opaque, straw colour. No head. Nose has fresh sliced dessert apple. Soft herb. Lemon rind. Flinty mineral. Taste is lightly tart, and dry. Some baked apple sweetness. Clean and crisp mouthfeel. Fine carbonation. Touch of acidity. More lemon and baked apple to finish. Refined, according to the missus. I’m not arguing.

750ml bottle from Hop Burns & Black. Hazy yellow gold colour, short-lived white foam head and aroma of oil, funk, apple, straw. Taste is mellow apple, fruity, with some funk, and acidic notes. Medium bodied, spritzy carbonation, semi-dry light citric finish. Nicely drinkable.

9/6/2019. Bottle, sample, courtesy of danlo, cheers Ed! Pours cloudy/bitty golden peach colour with a frothy/bubbly just off-white head. Interchanging aroma of apples, red grape juice, redcurrant, citrus, flowers, hint of almond, hint of aniseed even a little mint leaf at times. Moderate sweetness, bitterness, tartness and body. Slight oily texture, average carbonation.

Bottle huge thanks to Paul for this one. A light hazed peach orange coloured pour with a fine white head. Aroma is really nice floral apple juice, bee sting, grape, meadow. Flavour is composed of floral notes, brambles, dry white wine, light chalk. Little bark. Crisp white wine in the finish.. Palate is fine and crisp, very fine effervescence. Light dry finish. Really nice, light peppercorn.

Bottled picked up in Weegie Land. It pours a lovely blush rose colour with a small white head. The aroma is sweet, juicy, ripe red grape, plum fruits, plum, damson, sponge cake, floral, juicy red apple, perfumed, rose wine almost and light custard. The taste is crisp, dry, touch of light acidity, grape skin, juicy, tannin, oak, floral, rose, spritzy, red apple and watermelon notes with a soft finish. Medium body and fine, massaging carbonation.. Super balanced and well rounded. Nice stuff.

Tillingham Ovevri Cyder Peaux de Pomme 6.5%. Bottled shared in Tarbert. It pours crazy cloudy golden - orange with a dissipating white head. The aroma is fresh, funky, tart, tangy, zingy, rich tart apple, apple skin and some traditional lemonade. The taste is crisp, dry, tart, zingy, apple pie, ripe apple, apple juice, funky, oaky, sour candy, lemon sherbet, tannin, touch of acidity, hint of pear drops, clay,.dull alcohol and apple pie with a dry finish. Medium body and fine, foamy carbonation. Really nice balance. Tart, dry, sweet and a bit sour. Comes together very well.
