On tap at Isle de Garde, pours a hazy blonde, no head. Aroma is wild and funky, with lots of mixed culture, crisp apple skins, and champagne-like effervescence - that's complex. Flavour is complex and funky, with lots of apple skins, crisp dried green apples, all sorts of wild yeast, moderate barnyard funk, and some champagne-like effervescence. Complex, cohesive, nearly bone dry. An expert blend.

(750ml 2018 bottle from L'Axe du Malt, Quebec City - barrels not specified so I will rate under the 'regular' version) Pours quite hazy pale straw gold with a rapidy dissipating sparkling-wine type head from active carb that frothed up in the bottle and displaced sediment. Aroma of lightly sweet and somewhat sour crispy red and green apples, a fair amount of oak, pretty heavy barnyard and soft cheese Brett funk, apple skin, soft tannin. Flavour is quite dry with very light sweetness and light to moderate sourness, green apple and storage apple mixed vibe, moderate tannin, fair amount of oak, clear Bretty barnyard and slight sulphur, some minerals in the bone dry finish with oaky structure, good chewy tannin and lingering funk. Moderate body, slick, nice filling bottle carbonation. I actualy bought this bottle by mistake reaching for another cider, but was quite pleased by it!

(On tap @ Le Projet, Quebec City, Nov 11/19) Pours hazy straw gold with a small white ring. Aroma is light apple, ample burnt wood, vanilla, toast, mulchy funk. Flavour is moderate sweet and light tart apple, ripe cheese (blue?), loads of wood, vanilla, hints of coffee and bourbon, bone dry funky woody finish showing clear Péché influence. Medium bodied with smooth filling carbonation. Nice wild cider with an interesting mix of funk and barrel characteristics; I definitely picked up stout-esque notes unlike some.

On tap at Mondial des Cidres, pours a hazy blonde. Aroma brings out lots of wood, barnyard funk, and some wild yeast. Flavour is along the same lines, with a wonderful woody character upfront, with barnyard funk and some champagne must. Complex and wonderfully balanced. Excellent.
