A lightly hazed blonde cider with very light pinkish hue. In aroma, sweet fruity apple juice with light Brett, light lactic notes, light Epsom salts, very nice. In mouth, a nice sweet fruity mix of tart apples, light Brett, light lactic notes, very nice and smooth. On tap at L'autre oeil.

750mL bottle, pours a hazy blonde with almost no head. Aroma brings out vanilla ice cream, apple skins, apple core, and a hint of oak. Flavour is dry and oaky, with crisp apple skins, light vanilla, and oaky tannins. Tannic, oaky, and crisp, with nice wild character. Very good.

(750ml 2019 bottle from L'Axe du Malt, Quebec City) Pours nearly clear bright gold with a reasonable white head that fades fairly fast. Notes of well-concentrated apple flesh, nice feel of cryo-concentrated juices without the sweetness, balanced astringent apple skins and fine tannins, prominent yeasty tones but more sourdough than heavy funk, white wine accents, moderate plus oak barrel, quite dry throughout and very dry on the finish with nice apple concentration, astringency and prolonged oaky notes. Medium-plus body, filling bottle conditioned carbonation. Very nice stuff, reminiscent of a hybrid between cider and cryo-concentrated apple wine as you might expect.

On tap at Isle de Garde, pours a hazy blonde, no head. Aroma is wild and funky, with lots of mixed culture, crisp apple skins, and champagne-like effervescence - that's complex. Flavour is complex and funky, with lots of apple skins, crisp dried green apples, all sorts of wild yeast, moderate barnyard funk, and some champagne-like effervescence. Complex, cohesive, nearly bone dry. An expert blend.
