Louis, mon père : mon modèle
J’en ai connu des hommes de caractère… mais comme mon père, pas beaucoup. On peut dire que mon destin de cidrier commence avec lui, en 1918, quand il décide d’acheter le cidre des fermes du voisinage pour le revendre aux clients de son épicerie. Personne n’y croit, sauf lui. Mais comme toujours, il a le nez creux : 5 ans plus tard, en 1923, il ouvre notre première cidrerie à Domagné.
Domagné : mon enfance
J’ai grandi en voyant mon père construire avec courage et détermination son héritage : un cidre de caractère qui traversera les générations. Mon père était un homme sévère, mais toujours bienveillant. Chaque jour, il me répète : “Tu seras un homme quand nous partagerons les mêmes secrets“. Je deviens donc son apprenti.
L’exigence : mon premier combat
S’il y a bien une chose sur laquelle je suis intransigeant, c’est la qualité. Grâce à la maitrise de la fabrication que m’a transmise mon père, je cherche la parfaite combinaison de robe et de saveurs. A 25 ans, je reprend les rênes de la cidrerie et je passe des mois et des années à construire, déconstruire et reconstruire les assemblages.
Paris : ma première conquête
Comme mon père avant moi, j’avais une idée derrière la tête… J’ai toujours su que le destin de notre famille ne se limitait pas à la Bretagne. Ma bataille à moi, c’était la capital. Mes années d’expérimentations n’ont pas été vaines… en quelques mois, Paris est conquis.
La Sistronomie : mon héritage
Très vite, je décide de sortir mon cidre du tonneau pour le mettre… en bouteille ! Je l’appelle DOMA, en hommage au village de mon enfance. Non, ça n’a rien à voir avec du sentimentalisme ! Au-delà de conserver les arômes (ce qui est bien le minimum) la bouteille favorise surtout les moments de partage et de convivialité. Un premier pas vers ce qui deviendra mon héritage : l’art de la Sistronomie.

13/9/2020. 750ml corked bottle courtesy of Boris, cheers for this one! My French #100. Opened with a modest pop. Pours beautifully clear deep golden with a small bubbly white head. Aroma is sweet, rich, apple, apple pie, caramel, touch of wood and yeast. Quite sweet, with a subtle tartness. Medium body, soft carbonation. Some drying to finish, and a little more woody. Very drinkable.

Bottle from Cork & Cask. Clear golden body with a thin white head that slowly fades. Steady carbonation. Faint lacing. Aroma of apple, green beans and earth. Flavour of crisp apple and dried leaves. Thin body with a slick texture. Soft fizz. A classy cider with no harshness to it.

Sample courtesy of minutemat, cheers Mat! Orangey golden colour, short-lived thin white foam head and aroma of juicy apple, light woody funk. Taste is tangy, apple, fruity, drying, some skin, wood, hint of caramel, with spicy tannin. Medium bodied, light carbonation, dry tannic finish. Nicely drinkable.

Bottle. Color: Clear golden, white head. Aroma: Freshly pressed lightly tart applejuice. Taste: Moderate sweet and tart applejuice, subtle appleskin hints. Light funky. Very light bitterness. Medium body, average carbonation, lightly foamy mouthfeel. Nice refreshing cider. I like the tart part of it.

La Cidraie Herb. CSR SA. 4.5%. Sweet applejuice, light apple vinegar, tart. Sweet up front. Dry and light woody tannins in finish. Bit watery and flimsy. Average carbonation.

75cl bottle from Auchan. Golden copper, lightly misty. Lovely rich toffee apple nose. Taste presents a very light, fine spritz. Soft stewed apple sweetness, gentle caramel, very fine fuzzy tannins, very light and drinkable overall, but lacks the layered depth of flavour and tannic presence of other 'trouble bouche' cidres, coming across a little basic.

Sample courtesy of minutemat, cheers Mat! Golden orangey amber colour, white foam that dissipates away and aroma of musty apple, earthy. Taste is sweetish, tangy, apple, woody, oak, with some dried fruity and loamy notes. Medium bodied, soft carbonation, medium finish. OK

Bottle from Côte At Home. Sweet juicy aroma. Bright gold. Thin bubbly translucent white head. Medium sweet with a hint of sourness. Light-medium bodied. Slick if thin. Fizzy carbonation. Chalky residue. Dry finish. Very drinkable if low key. But could happily drink a few bottles.
