Bouteille 33cl, BB 02/2021.

Bottle. Cloudy orange with a massive white head. Total gusher. At least a third of the bottle went down the drain...Aroma of camomile, citrus fruits and yeast. Taste is yeast, citrus fruits, spices, orange peel, elderberries and of course camomile. Bitter finish. Medium to strong carbonation. Would be quite nice actually if the camomile was a little bit more kept in check.

The second beer commissioned by this chain of interior and untensils shop - which has apparently been added as a brewery here, no idea why that should be the case... Anyway, bottle from the Dille & Kamille shop in Ghent, thanks Goedele! Egg-white, mousy, fairly thick, large-bubbled head over a cloudy peach blonde beer with pale orange hue, turning milky and more ochre-tinged with sediment. Aroma of dried camomile indeed and a lot of it, sweetclover and other field flowers, sweetbread, pineapple, white pepper, dry oatmeal flakes, curcuma powder, banana, sour apple peel, dried 'herbes de Provençe'. Fruity onset, estery notes of apricot, pineapple and light banana, some apple peel, fizzy and minerally carbonation, bread crumb-like, bit powdery and cereally middle, quickly soaked in a strongly forwarded, yet easily palatable floweriness of camomile, sweetish, spicy and a bit 'weedy' in a good way, with some dusty breadiness lingering in the end, along with a very mild grassy hop bitterish touch. Quite distinct and a very different take on the old witbier theme, decidely un-Hoegaarden in that sense, very floral and 'summery' - I can enjoy something like this.

Spiced Dutch ‘bokbier’ apparently made by Naeckte Brouwers for the Dille & Kamille shop chain. Bottle from the Dille & Kamille in Ghent, thanks Goedele! Slow gusher but perfectly manageable. Moussy, pale yellowish white, medium sized, opening head, hazy mahogany-bronze colour. Aroma of the intended ‘speculoos’ and ‘pepernoot’, cinnamon-, clove- and cardemom-like, gingerbread, fig, butterscotch, brown sugar, stewed apple, dried plum, hints of white pepper, wet dog, manure. Sweet, bit peachy and fig- and banana-ish onset with sourish apple and plum touch, fizzy carb, bit fluffy, rounded, lightly resinous mouthfeel. Caramelly and slightly bread crust- and peanut-like malt sweetness is quickly drenched in an ethereal, aromatic cookie spiciness, ‘speculoos’ and gingerbread indeed, coriander, cardemom, cinnamon, strong but not so strong that it becomes overly medicinal or physically difficult to drink; earhty yeasty notes, some additional phenols, mild toasty bitterishness and a floral, very softly peppery hop bitter touch round off the finish. Typical modern Dutch Dunkelbok with a twist, accessible and straightforward but decent enough – if you like spice beers, which is a must in this case.

Huge cream head over very muddy brown beer. Banana, milkchocolate, cinnamon, clove. Spicy nose, and more than a 'tad' as claimed on the blurb. More spices, more milkchocolate in the mouth. Bit green herbs; speculoos, caramelcookies. Feels very carbonated, more than a bit slick. Spices keep lingering, especially the cinnamon and pepper. Too spicy to be really enjoyable. resulting in a unidimensional beer. 6/4/7/3/12

Bouteille sample, Dille&Kamille, Louise Bxl.
