Casita Brewing Company is owned and operated by Ryan and Mahalia Witter-Merithew. Ryan is a seasoned brewer, having worked as a professional brewer in Denmark, England, and of course, the United States over the last thirteen years. Mahalia is the heart of the business and the president of the company.
Casita started as a contract brewery at Hill Farmstead Brewery in Greensboro Vermont in 2015. In 2017, we moved this business to our home state of North Carolina, where we produced our beer at Duck-Rabbit Brewery in Farmville. In 2020, we are set to open our very own brewery and taproom in Mahalia's hometown of Wilson, NC. We will be open to the public by August 30th.
Over the years we have brewed over 50 different beers under the Casita name. Ryan is excited to bring this creativity to our new taproom, where we will be brewing some old favorites as well as some new beers we haven’t even dreamed of yet.
The logo for our brand is a letter 'C' in the shape of a little house. The 'C' of course stands for Casita, but it is our hope this 'C' will not only represent our brand, but a lot of our other favorite words that start with 'C', like craftsmanship, creativity, compassion, and community. These are the key principles of our business.

$5.22 can from Appalachian. Low-ball glass at home. Thick slow pour, deep oily brown on black pour, lingering sticky cocoa lace. Chemmy vanilla, sticky molasses, honey breakfast cereal nose. Toasty, varnished, burnt chocolate, slightly sharp, faint hint at cherry, heavy herbal hops, mellow vanilla, lingering earthy bitter finish. Slow carb, thick body, moderate acid, really boozy. Heavy sipper.

Pint can from Appalachian. Topped off on 3-11-24. Impy pint at home. Thin & barely opaque, russet on brown, thin lace brew. Soft malt roast, slightly burnt toast, strong choco cookie, slight ash, well water nose. Burnt, ashy, sooty lingering bitterness, very slight sweetness, hidden acid, mellow Cheerio finish. Thin, minerally,, good carb, doesn't feel like such a small beer. Rough, whatever quaff for those that like it.

$6.05 pounder from Appalachian. Pint glass at home while waiting for more rain. Brown on black, opaque pour. Oily, slow to fall cookie dough head. Rich fudge, spicy wood staves, Malibu coconut rum nose. Sweet, spiced & sharp. Chocolate fudge, really sharp figs, coconut oil, slight veggie bitterness, salty burnt caramel finish. Really like the sharp dark fruit bite. Density & construction is very Burial-like. Thick & heavy, soft carbonation, boozy tiramasu, belly burn. I couldn't find much oxidation underneath the heavy flavors. They probably hid an off barrel in the blend but I really liked how it turned out.

Pint can picked up in VA - deep black - fizzy pour that kicks up a tan head that dissipates quickly - nose of dough, fig, treacle, chocolate, molasses, tamarind, umami, oak, bourbon - slick mouthfeel - all the elements from the nose present in the flavor, along with a moderate tartness and oxidation - not sure if the tartness is on purpose, but it works here to a degree, presenting a drying acidity before a warming, moderately boozy finish.

(Thanks, Jim! Ozzy70) Can. A- Vanilla, stone fruit. A- Orange color, cloudy liquid, off white head. T- Pistachio, vanilla, faint apricot and peach. P- Medium body, average texture, average carbonation, balanced finish. O- Well balanced. Kinda smoothie like. The pistachio honestly stands out more than I though. A fun beer but a few oz would be enough.

On tap at SP Invitational. Pours black with medium tan head that lasts. The aroma is strong hazelnut, cocoa, roast, whiskey, wood. Slick body, similar flavors to nose, nice sweetness, enjoyed this.

Can at home in Crumlin, picked up from Craft beer Central ie. A hazed golden orange coloured pour with a decent white froth. Aroma is semi sweet, big danky orange, green mango, creamy wheat coconut. Juicy fruit. Flavour is composed of semi sweet, pithy citrus, orange rind, dank, some alcohol, medium dank. Alcohol bite. Palate is semi sweet, spicy hop, highish carbonation. Good stuff.
