Description
C’est dans le petit village belge de Romerée, aux confins de la province de Namur, que la Brasserie des Eaux Vives a vu le jour à la fin de l’année 2015. Près de quatre années de travaux ont été nécessaires à la restauration d’une vieille grange du début du XVIIIe siècle. C’est sous cette charpente multicentenaire, dans ce berceau qui ne cesse d’embellir, qu’à l’aube de 2016, nous avons porté sur les fonts baptismaux notre petite première qui portait alors le doux nom de MAM’ZELLE BIBICHE.

Bottle @ home. Almost clear orangy golden color (after pouring in the yeast it becomes more of a hazy honey blonde color) medium sized white head. Smell and taste are malts, quite alcoholic tbh which makes it a lot less pleasant. A bit sugary. Medium body and carbonation. Meh.

F: medium, tan, good retention. C: dark brown, hazy. A: dark malts, caramel, fruity, dark bread crust, bit toffee, dried figs, honey. T: malty, caramel, bit toffee, dry on the palate, bit buttery, dried figs, bit roasted tones, medium to full body and medium carbonation, for such new brewery quite nice, enjoyed, 33cl bottle from Cora Woluwe-Saint-Lambert in Brussels.

F: light tan, huge, long lasting. C: amber, hazy. A: malty, fruity, citrus, orange, bit of tropical fruits, yeasty, honey. Original review text: 33cl bottle with the same barcode as “Eaux Vives Mam'zelle Bibiche” so probably alias, from Cora in Brussels. F: medium, white, average retention. C: gold, hazy. A: malty, tangerines, peach, bit mellow tropical fruits. T: medium to full malty base, orange, herbal bitterness, spicy, bit tropical fruits, peppery, medium carbonation, dry on the palate, long lasting bitterness, nice one, enjoyed.

New Wallonian ale from a hobby brewing project that has been existing for years but now made the step to become commercial. Bottle at Trollekelder. Towering high, densely rocky, snow white, stable head; hazy straw blonde with warmer peachy hue. Aroma of peach, raw pineapple, field flowers, honey, purple gooseberries, raw spinach-like iron, yellow raisins, banana, bread, white pepper. Fruity, estery onset but in a relatively ’clean’ way, banana ester matched with gooseberry, peach and pear, fizzy carbonation but not overdone, honeyish sweetishness in the middle over a bready malt core with sharper grainy edges, a tad metallic, ending in an earthy, floral and grassy hop bitterness, actually more spicy and long-lasting than expected and unexpectedly balancing out the honey sweetness from the beginning; bready yeasty notes as well. Starts off sweet, but just as this sweetness almost becomes too much, the hops adequately save the day. Not bad at all for a first commercial attempt.

Bottle shared at the Great Job America tasting. Murky dull golden brown with a big white head. Aroma of herbs, yeast, light caramel, malt and light citrus. Flavour is moderate sweet and bitter. Medium bodied with above light carbonation.

33cl bottle shared with Kermis at the "Disaster, Trump will be president" tasting :-( Thick white head. Cloudy amber pour. Not bad.

Towering, very lightly yellowish head, big-bubbled and not very stable, fed by very lively carbonated, old golden beer; end of bottle lots of yeast. Herbal, bit spicy, peppery nose with a hint @ caramel. Lots of pale and some lightly coloured malts; faintly earthy. Bitterish, again earthy, spicy-herbal, gouache. Quite integrated flavours to an agreable bitter-sweet balance. Head seems to sport ironoxyde... Light to medium bodied at best, very effervescent, near-fizzy carbonation, bit slick. For a first try, more than laudable.

19/VII/16 - 33cl bottle from Geers (Oostakker) @ home tasting - BB: II/2019 (2016-766)

Little hazy dark blond beer, big creamy solid off-white head, very stable, adhesive, leaving a nice lacing in the glass. Aroma: pretty fruity, banana, some citrus, yeasty, peaches, bit sourish. MF: ok carbon, medium body. Taste: bit sweet, malty, bitter, some citrus, grassy, some banana. Aftertaste: malty, very bitter, little chemical, rubbery, malty, some caramel, more banana, bit metallic.

Bouteille 33cl. BB 03/10/2018. Dorée trouble, col très épais dès ouverture crémeux. Arôme met de suite en avant un bouquet épicé qui est prenant voire trop en avant. Le rétro se situe sur du grains, malté pils, pâle avec un léger houblonnage noble. Palais est mitigé avec au premier abord une effervescence assez faible et qui arrive plus en fin de bouche. Alcool perce pour ses 7% avec un fini levure qui semble être trop en avant, retrouve également un épicé un poil dominant et qui laisse le houblon plus en retrait. Malt au caractère carapils, pâle qui arrive vraiment sur la fin. L’épice s’apparente à la coriandre avec un fini levure offrant un caractère (surtout en fin de bouche) chimique.
